I am a Professional Calphalon user and thought I would give the Commercial line a try. This is the first commercial Calphalon I bought and I must say that there is a noticeable difference in the quality immediately. However, the quality is much better than the average pots/pans out there so I would still recommend it, but not if you're used to the Professional...

This Calphalon Commercial Nonstick 2-Quart Chef's Pan with Lid is a "collector's item" from the newer line of Calphalon's nonstick cookware. Thus, it has the same alloy aluminum pan as the older "Professional nonstick" line, but its interior has the superior Commercial nonstick coating. Its handle is "stay-cool" sculpted stainless steel, instead of an older chrome-covered iron handle that can get very hot to the touch. The 9-Inch bottom of this chef's pan is slightly smaller than that of the 3-Quart Sauté pan, which is another useful pan that usually comes with a Calphalon starter set.

This pan is a real bargain. Since Calphalon rarely offers such deep discounts, especially on their newest nonstick line of cookware, it seems worthwhile to add it to one's collection. If you have not tried a Commercial nonstick pan, I recommend this one as a test pan. The Commercial nonstick omelet pans are excellent, but one can get them in a starter set at a good price, too.

Because this chef's pan has the rounded shape, I use it for stir-frying, reducing sauces, and making demi-glace. I have two flat-bottomed woks (Joyce Chen and Calphalon), but they do not work that well on an electric range, and they are not nonstick. This chef's pot is useful for a small-to-medium stir fry on either a gas or electric burner. When the stir fry is done, I use a Calphalon nylon scoop to remove the cooked food, then reduce the sauce.

Since this pot is nonstick, clean-up will be easy. Any residue can be removed with a nylon scrubber and Soft Scrub. Hand-washing is recommended by Calphalon. I have had some of these Commercial nonstick pans for four years, and they still look like new.

This is a nice little pan for cooking single-dish meals for one or two people. Heavy aluminum construction with an immaculate nonstick coating, all for an unbeatable price. However, the small base combined with the long steel handle makes the whole pan slightly off balance. If you bump it just right, especially while it's preheating on the stove top, it may go tumbling. But once you get some food in it, it's fine.

I am a Professional Calphalon user and thought I would give the Commercial line a try. This is the first commercial Calphalon I bought and I must say that there is a noticeable difference in the quality immediately. However, the quality is much better than the average pots/pans out there so I would still recommend it, but not if you're used to the Professional stock.

I found this pan to be much too small for stir-frying. It's shaped like a mini-wok with the top of the pan measuring 9 inches, but the bottom is much smaller. Hence it is not too useful for typical frying-pan jobs like scrambling eggs, frying bacon, cooking a grill cheese sandwich, etc. And it is not large enough or deep enough to stir anything. I plan to return my pan and spend the money on a more useful pan.

This pan is wonderful! It is deeper than a frying pan, almost like a small wok, and is perfect for stir-frying as well as many other everyday uses, like making scrambled eggs. It has a good weight, the handle stays cool, and the non-stick interior is extremely easy to clean. (Just be sure to use non-metal utensils and don't put it in the dishwasher). I use it so often that I leave it on my stove, ready to go. A great bargain at this price, it's a very good way to try out Calphalon's Commercial Non-stick line of cookware.

An excellent little pan. I was ambivalent at first, not particularly interested in having any non-stick cookware.

Main drawback? The pan's smallish size. But we can hardly blame the pan, can we? I have still crammed a lot of food into this tiny thing...great for wilting a bag of spinach, great size for making sauces and personal stir-frys.

The nonstick surface is excellent. A few roommates have abused it in my absence and it still works great. I use it for pancakes, etc., since I lack any other skillet or omelette pan. The steep sides make flipping with a spatula a little work. However, the shape of the pan makes hand-flipping quite simple.

I have not had trouble with the pan's balance when empty, however I have dealt with much worse at work and so maybe calphalon's relative excellence had spoiled me. Nor have I had particular trouble with the handle getting hot, but again I'm used to everything being hot.

The lid is great, both because it is domed and it forms a good seal when liquid is present. It also allows the pan to be used for many other purposes to which it would not otherwise be suited (e.g. simmering messy sauces, wilting leafy vegetables)

Final thoughts: this attractive little pan is shaped thoughtfully, comes with a lid, comes clean very easily thanks to excellent non-stick, and can be used for just about anything (I have steamed, boiled, fried, roasted, sauteed...). Don't expect it to feed a family. It's ideal for one or two people, and for larger groups it will be a favorite for side-dishes, tapas, etc. Goes right in the oven.

This skillet is an excellent tool that if given a chance will be useful every day. As long as you don't expect something from it that its size simply cannot deliver, it has earned all five stars.

I just bought three more Calphalon pans (commercial hard-anodized) and expect as much from them.

This pan is superb - perfect for cooking for two people. I bought it a month ago and use it all the time. Heat is distributed evenly across the bottom and quickly. It is so easy to wipe clean. The stainless lid fits great. If you are looking for a medium size non-stick fry pan, BUY THIS ONE - you won't be sorry!

If you have not tried Calphalon commercial nonstick this pan is highly recommended. The domed lid is more than beautiful, it truly seals in all moisture. The pan literally rinses clean - never needs soaking, and the nonstick finish is very durable. The handle rarely gets uncomfortably hot, but the handle on the lid gets hot. One minor annoyance is that handle is a little too heavy so the pan tends to tip when nearly empty. On the plus side, the light pan is a nice design for stir fry. It is true that it is great for stirfry, but look at the size - and don't expect this size will stirfry more than a small side dish.

This pan does everything you want to do for one or two people. It browns nicely (which, for me, is the 'issue' with non-stick -- and I love my Commercial Nonstick skillets). And it simmers beautifully, especially with the domed lid (a design 'stroke of genius,' as far as I'm concerned).

I've been in an 'Indian-with-a-French-base' phase, lately. This pan is 'front-and-center' with all that, and I'm sure will stay there for the foreseeable future. I really do like it and really would be interested in a 2 1/2 quart or 3 quart version for small dinner parties.

If you try this pan, you will want a larger version, too. Great design (even of the lid!), great non-stick coating, great results (every time).

This is a wonderful pan! It's perfect for everything from sauteing ingredients for sauces to scrambling eggs. The shape is perfect for the rapid evaporation of liquids to condense sauces. The anodized aluminum pan conducts heat evenly allowing you to cook on medium heat. It's non-stick surface is durable and easy to clean. For larger recipes it has a bigger brother too. It quickly became one of our most used and indespensable pans.

Very nice skillet, good quality nonstick, easy to clean. One problem: technical data says that this skillet is manufactured in USA; the bottom of the skillet says "made in China". I'm having a hard time determining which Calphalon products are made in the USA.
