Larger Nonstick Oval Fajita/Filet Pan--Good Buy, April 24, 2001

The Calphalon Commercial Nonstick Fajita/Fajita Pan is a new item from their superior line of nonstick cookware. Thus, it has the same aluminum alloy core as their other lines, but its sculpted stainless steel handle remains cooler to the touch. The oval shape of this 14-inch fajita/filet pan is also ideal for pan-frying or sauteing fish, boneless chicken breasts, or flank steak. The pan can be placed in an oven with a temperature up to 400 degrees, and it can be heated on a burner to medium-high heat in a short amount of time. Calphalon does not recommend use of pan cooking spray because it can cause a sticky residue build-up. The nonstick finish of this pan is excellent. I have been using some of my Commercial nonstick pans for four years now, and they are not scratched at all. I use the Calphalon nylon utensils with them. If I were using this pan for a large filet of fish or beef, I would use two nylon spatulas to turn them. Hand-washing this pan is recommended, with use of Soft Scrub cleaner for any stubborn stains.

This pan is wonderful!! It is non-stick, holds a vast amount of food and clean up is a breeze. This is the first Calphalon non-stick pan I've used. It browns food to perfection. The sides of the pan are shallow which allows easy manuvering of food in your pan. I was amazed at how evenly this pan cooked. Due to the fact that it is oval shaped (and it's really oval-shaped), not all of the pan is on the eye of your stove. However, even the parts of the pan that are not on the eye get hot and cook as evenly as the part of the pan this is actually on the eye. I've used it to cook egggs, fajitas, grilled cheese sandwiches, and all have turned out golden brown and not burned. My only qualm with this pan is that it really is oval shaped, and does not stack with other pots and pans. Therefore, I cannot store it with my other pots and pans, in their confined space. However, it really a wonderful even cooking, easy clean up pan.

A Handy OVAL Pan, December 29, 2002

I don't know why people are whining that it is an oval pan. It clearly is. I got a good deal on this pan from Amazon. At first, I wasn't sure what to do with it. I have yet to cook fajitas on it, but... It is great for cooking a huge amount of other things on it. I can cook two eggs and be sure that they don't run into each other. I can also fry two veggie burgers in the middle while heating up the buns on the far ends. You can cook 4 or 5 slices of ham. I've cooked it pretty darn hot without burning the non-stick coating, although you have to be sure you don't slop grease onto the anodized outside (like all anodized aluminum pans) because it's hard to clean. In a nutshell, it's a weird shape, but I have found it more versatile than a fixed round or square pan/griddle. You just have to think outside the box.
