Product Description

Combining features of a chefs knife and a cleaver, the Santoku is an all purpose Asian-style knife that's ideal for cutting meat, fish and vegetables. The word "santoku" means"three good things"- a reference to the three cutting tasks it performs so well: slicing, dicing, and mincing. The Santoku is designed with kullens, ot indentations along it's edges, which reduce friction and prevent food from sticking to the blade. The knife also serves as a spatula as you cut, removing cut foods quickly and easily from the cutting surface.

Don't get me wrong, this knife isn't all that bad, but it's not all that great either.

If you are looking for a smaller Santoku for a decent price then you might want to check this out, but I ended up taking this one back. I'm the kind of guy that really only uses a couple knifes in the kitchen. I find that the Santoku satisfies just about every need, so I felt buying a set of 15 knives would be a waste of money, as I would only use a couple of them. With that in mind I went to go buy this Calphalon santoku.

First I realized that this knife was too small for me (but this isn't taken into account in this review, that was my own fault). I then proceeded to make a few cuts with this knife to test it out. I grabbed a grapefruit and decided to see how small I could slice it up. The first couple of cuts were beautiful, but I quickly realized that it started to dull out on my as I got towards the end of the grapefruit. I used my sharpening steel to re-align the blade and everything seemed okay again (but you shouldn't need to do that after a single grapefruit!)

I also noticed that this knife stains pretty bad. There are (were) pretty ugly stains on the blade after a single use. I tried washing it (by hand of coarse) and the stains did not go away. The stains looked a lot like finger prints.

I have heard a lot of good things about Calphalon so it's possible that the knife I got was a bad one. I didn't take this chance again, instead I got the Henckels Four Star 7in Santoku. It may be twice the price of the Calphalon, but if you find that you only need a couple knives I believe you should probably get the best knives your wallet will allow. The Henckels Four Star are absolutely amazing by the way!... but that's a different review.

I wanted to get a santoku, but I am somewhat of an amateur in the kitchen. My boyfriend (an expert cook) has the 7 and 8 inch santoku from Henkels in his knife set, which I thought were way too big for me. I am really happy with this 5 inch. You can cut everything from vegetables to meat with it. He thought the knife would be too small for him, but he loves to use it when he comes over to cook. Its crazy sharp and the slightly rounded edge rocks it really nice over vegetables and pretty much everything else. I love this knife!

This is a beautiful knife. It's extremely comfortable to hold, seems well balanced and cuts vegetables nicely. It looks like it is very well designed, has nice heft and seems well built except for one problem....The shaft connecting the blade knife to the handle and runs through the handle is only 13 mm by 2 mm and under normal circumstances would seem sturdy enough.

However the knife we had snapped at the handle after 15 uses chopping only vegetables. When it broke there was a loud snapping sound and the knife fell to the floor just missing my wife's leg. The knife was only hand washed and always immediately dried with a towel. (We have some knives that are 50 years old and still look in perfect condition using this method of washing and drying.) Examining the knife there was no visible damage on the outside. If you reassembled the knife, it looked brand new. However, looking into the handle there was rust stains and the shaft had rust that measured 7 mm by 1 1/2 mm which means only 1/2 mm of solid metal was holding the blade in the handle. The steel used in this knife is obviously an inferior stainless steel that is prone to rusting this seems to be my only conclusion. How did this happen? I can only surmise that moisture leaked between the plastic and steel and rusted the steel in the middle of the shaft. There was no evidence of any rusting on the outside of the knife anywhere. We have several other Calphalon knives with the same design that are working.

Calphalon Customer Service Response:
I sent a digital images of the knife and Calphalon immediately sent out a brand new replacement knife. My wife was leery about using it but is trying it out very carefully. It is hoped that what happened to our knife was not typical and that our knife had a bad batch of steel.

We have the longer 7" Santoku by Wustoff and we decided to try this smaller version. It is a great knife with a good edge. We love using it. It is also well made and nicely balanced.

I did not buy this from Amazon. But, just for the safety of everyone, I am posting my review here. I have been using this knife for over a year. Today I was cutting vegetable. Then suddenly the blade fell off on the floor. I slightly cut my hand. But nothing serious. I carefully looked at what happened. The handle of the blade that was embedded into black plastic was completely broken. It is not plastic that was broken. It is blade that was broken. I had a bigger santoku from Calphalon. So I immediately throw it off. I would not buy anymore from this brand.

I have the whole set and love them!! This size is my everyday, go to knife for chopping and dicing. I had to replace this one because I dropped the old one and it broke off the tip. These knives hold their edge when you sharpen them. I am not a big person and this knife has a good weight and is perfectly balanced for my little hand. Even if you don't seek out the whole set, i recommend this one for everyday use.
