Translated as "three good things", the santoku knife is equally suited to slice, dice, and mince. Constructed from one piece of high-carbon, stain-resistant, German steel, this knife is individually balanced increasing the comfort, efficiency, and strength. The blade has been hand ground to achieve maximum sharpness and designed with kulles, indentions along the blade edge that are specific to the santoku knife. I bought this knife two months ago, we use it everyday and it is still as sharp as the day we bought it. My husband and I love it. We do use a wooden cutting board. I bought it at a store and was able to compare it to other Santoku knives. I actually handled them. The handle on this seemed a little longer (for my husbands big hands) and it just had a good feel to it, good balance and good weight. It is made in China from German steel and the handle feels to be some sort of metal also. We are very pleased, no regrets about not buying the one that cost $$ more.

I have had this knife (in addition to the 15 piece set) for almost a year. The blade is still very sharp and cuts tomatoes, chicken, pineapples, etc. all with ease. This is a great multipurpose knife and I use it all the time. Well weighted and a nice grip. I have found that a Santuko and a paring knife are sufficient for most of my cutting needs.

These are decent knives. They get the job done and are much more affordable than other "discount" knives with german steel blades; and much more affordable than ceramic.

I have not had an issue with sharpness, because I take care of my knives.

You would be surprised how many people that complain of "dullness" use a glass cutting board or cut directly on the countertop.

My wife and I have had this knife for 2 years. It is still the first knife either of us pick out of the block when we cook - reaching right past our Henckels and Wusthofs.

The blade has remained very sharp with only a honing after every other use. We can still make razor thin slices of ripe tomatoes and it's never been professionally sharpened. Of course, you should only cut on wood or plastic boards - never on glass, granite or Corian!

The weight, balance and feel are perfect.

The scalloped sides do the trick *sometimes*... not every Santoku works as it should and this knife is no exception. Some vegetable slices and other thin stuff can stick to the blade. It is great for most prep, though, and perfect for carving and slicing meats.

I have 7" santokus from Shun, Henckels, Wusthof, Tojiro, and Global, all cost several times as much. Yes, this Calphalon cannot compare in terms of workmanship, but the workmanship/quality is better than most cheaper knives. More importantly, it's an excellent knife: sharp, well balanced. Somehow it's heavier than all the higher end knives mentioned above. I've been using it as my main knife for 3 years, still sharp, love it. Highly recommend.

I purchased this knife about 6 years ago and I still use it daily. I'm a professional chef and this is the knife I use at home. Comfortable to hold (I have big hands), great for any chopping job. Had it professionaly sharpened once, but it stays sharp with a sharpening steel once a week or so. This is the knife I recommend when people ask what I use. Great bargain.

I am a student and have owned this knife for over 3 years through multiple student housing situations in which my belongings have been abused by idiots. Somehow this knife has held up amazingly. Given that this knife has NEVER been sharpened in the past three years of abuse, but is still the sharpest knife in my current household, I must say that it was a steel of a deal for the price I paid (discounted at ross). I am about to order one for my little brother, even though the price on amazon is a bit more than I paid for the one I currently own I feel that this knife is a great bargain for the quality of metal you get. Compared to any other offering under the $80 price range this knife is as good as it gets in my experience.
