That’s to allow you to use a gentle, even rocking and gliding motion as you cut. The length and weight of the blade helps you work more efficiently. (The longer and heavier the blade, the less muscle you have to put behind it!) Use the whole blade to cut larger items like potatoes and Spanish onions into slices or strips. The bolster gives the knife weight at the heel so the back half of the blade can be used to make smaller cuts. The flat of the blade can be used to lightly “whack” the skins from garlic cloves, too.

I own many knives including several Wusthof's but I must admit that this one has been the true workhorse of my kitchen. Its a heavy but very versatile knife that possess amazing sharpness and balance that comes in very useful for just about any task from cutting up whole poultry to chopping up vegetables. I highly recommend it especially at this price.

This is a handsome knife with its heft and the full-tang full-forged stainless steel body, a great knife in the kitchen and value for the money. I have had this for over 2 years now (gift from my daughter). It has become my knife-workhorse in the kitchen because of its convenient weight, its size; that it is well-balanced and keeps its sharpness.

I've been getting into cooking and was in the market for something better than the super cheap lightweight knives I've used my whole life, and decided before shelling out triple digits for a high end Shun or something, to take it in baby steps and try a mid range knife like this and see how it goes from there.

This is a GREAT knife for me to use around the kitchen. It glides through raw meats and vegetables alike; cleanly and effortlessly. It's got a good heft and feels very solid and reliable but is also well balanced. I'm still very careful and methodical with slicing and chopping, but this knife (plus the 5" and 7" Calphalon Santoku set) have taken the chore and effort out of it and made it a real breeze. At this point, I don't forsee a need to upgrade to the high end; these knives seem VERY well made.

You could not get a better chef's knife for the price. Unbelievable. I have had mine for 6 years and never had to have it sharpened professionally. I keep it very sharp with a steel.
I would never buy any other knife now. I use to only buy Henkels. I must have had at least 6 Henkels throughout the years at about $100 bucks per knife. The Calphalon is way easier to keep sharp....and I like the weight better too. I guess there is more carbon in the steel. At any rate....the price is right and I actually love the knife more than any I have used before

If you're reading this review, either you cook alot or are buying for someone who does.

I started with the Calphalon Santoku which is an excellent knife but more suited for certain styles of slicing/cutting (think widely applicable for prepping Asian cuisine whereas the Chef knife is in line with American/European) leading me to this knife. Steel is fairly good quality and holds its edge well. It is well-balanced for high speed chopping with a full-tang in the handle. The grip on the handle is ergonomic for slicing/chopping, however it may not have enough "grip" on the surface if you want more heavy duty chopping (in which case you should be using a different knife).

Overall, the Calphalon is a quality, no-frills chef knife that I have found to be the most versatile piece of cutlery in my kitchen set.

Very sharp…even sharper than my Henkels cutlery. Comfortable grip and attractive appearance. The labels on the end cap is a nice touch. I opted to buy individual knives vs. a complete set in a knife block for several reasons: I did not need the knife block or the scissors, and the steak knives that came with the set got terrible reviews (I have cheap steak knives that do the trick just fine). Only reason for 4-stars (vs. 5) is that they must be hand-washed. But this is common among cutlery of this type. Perhaps if I'd been as kind to my Henkels, they would have held up better (handles are cracking). After I've lived with these knives awhile, I may upgrade my rating…assuming they remain nearly as sharp as they are now).
