This 8-inch omelet pan is ideal for a two-egg omelet or a one-person frittata, but is equally as useful for shallow frying or searing of meats. Part of Calphalon’s premium Tri-Ply Copper line, this brilliant stainless steel and copper-accented cookware cooks as beautifully as it looks. The pan’s exterior is crafted of copper--the most superior metal for heat conduction--while a heavy-gauge aluminum core runs through its center. The combination of these two metals provides more exact control while cooking and excellent results. The interior is made of 18/10 stainless steel, which is nonreactive to acidic foods and offers a reflective surface that makes it easier to know when foods are completely cooked. This cookware also has Calphalon’s patented stainless-steel Cool-V handles that stay cool to the touch on the stovetop. The wife and I received this as part of a wedding present. It soon became my favourite piece of equipment in the kitchen. You can cook almost anything with this and, eventhough there will be a quarter inch of gunk stuck to the bottom, this will clean right off when you wash up.

One slight criticism: both sides of the pan have changed colour; the bottom has gone more coppery, the top has taken on a dusty look to it. Still works fine, though.
