I can understand how the last person rated this grill. I probably would have done the same had I not first attended a cooking class where the Calphalon One line was used. There are some tricks that are referred to, but not suitably emphasized in the documentation that comes with the cookware. Most practiced chefs are already aware that surfaces need to have a fine layer...

Though this griddle is clearly well constructed and highly durable, after 3 days, I had no desire to use a chemical abrasive to scrape off everything that would stick to it no matter how slowly I preheated the pan and how much oil I used. I called Calphalon and was informed that I should be ready to use "Ajax" to get up oil buildup and not to expect foods to release like...

I can understand how the last person rated this grill. I probably would have done the same had I not first attended a cooking class where the Calphalon One line was used. There are some tricks that are referred to, but not suitably emphasized in the documentation that comes with the cookware. Most practiced chefs are already aware that surfaces need to have a fine layer of oil and that the type of oil used is also important. The temperatures are critical. The fat content of the food also comes into play. After about two fine tunings (after which the pan can be scrubbed with a cleanser like Bar Keepers Friend unlike "non-stick" cookware), my pancakes easily lift off the pan with a metal spatula (which you are also allowed to use). The real bonus here is that they are evenly and nicely browned, unlike `non-stick" cookware which tends to leave them done but with a pasty look.

If you are not a serious cook this cookware is not for you. But then if you are not a serious cook you shouldn't be spending this kind of money on pans either.

I followed Shannon's advice first; I smeared cooking oil on it and set it in the oven for 30 minutes on 220F, twice. Nothing sticks to it - French toast, eggs, omeletes, pancakes, etc. I use it on a ceramic cooktop and the whole thing heats pretty evenly. I love it. I will certainly try other infused pans.

I called Calphalon and was informed that I should be ready to use "Ajax" to get up oil buildup and not to expect foods to release like they would with a nonstick surface. I was aware that this wasn't a nonstick griddle, but was told that the Infused Anodized process facilitated easy release. Um, no. Pancakes, polenta... everything stuck to it no matter what. I returned the griddle within a week.

Contrary to the description above, this is NOT a non-stick pan. I tried making eggs and pancakes on the pan. Everything stuck to the bottom. I used bacon grease on the pan before I made the eggs. They stuck. I used butter on the pan before I made the pancakes. They stuck.

I could not get the pancakes off the bottom of the pan without destroying them.

This might be a good pan for searing and the cleanup that comes with it, but it is definitely NOT a pan to make breakfast or any other meal that requires a non-stick pan.

My 12-year-old T-Fal with a worn surface outperformed this pan making pancakes. I am definitely returning it.

i had some older calphalon pots and they work great. the new calphalon one line is great. no need to worry about scrating or peeling like the regular teflon pots. now i use almost no oil for my pancakes and crepes and they come out perfect.

I expected this griddle to be non-stick. It isn't. Everything sticks to it and I tried the "conditioning" tricks some other reviewer wrote about.

Apparently Calphalon makes a "non-stick" verstion of this griddle but I missed the fact that this one isn't. My bad I guess. I stopped using it after my "over-easy" eggs turned out to be scrambled because I couldn't turn them over without breaking them. Just terrible.
