Pretty good pan,

Overall I have been quite pleased with my Calphalon Omlet Pan. It heats evenly, and the nonstick coating is excellent. The shape of the pan is designed for omelets, but I use the pan for a wide range of frying. The metal handle can get warm, and the outside of the pan requires some effort to clean.

I'd like to offer my own experiences with this wonderful piece of cookware.Nothing sticks to it. NOTHING. Zip, zero, zilch. Not only does this aid in clean-up, mind you. One of my favorite recipes, called Chicken Gregory, has you dust boneless skinless chicken breasts with flour before putting them in the pan. In my stainless steel omelette pan, this was pointless because the flour would stick to the pan, not the chicken. Flavors don't get washed down your drain, they stay with your food. The pan heats fairly quickly and responds to temperature changes about fifteen million times faster than stainless steel. I'm still learning how to cook (much better than I used to be, though I still break egg yolks now and again), but I've already figured out how the shape aids with flipping food sans spatula. And I've never had an easier time making an omelette, either. For a college student who loves to cook and eat good food, these Calphalon pans at Amazon at these prices are a miracle.

Nonstick sticks,

The nonstick surface works poorly for eggs, unless you use a small amount of butter, etc. We have several other nonstick and hard-anodized items from most of the Calphalon lines and they all perform great, including with cold foods. I'm not sure why this omelette pan is different, or why other reviewers have not observed this problem. I purchased this pan as a ... collector's edition special. Maybe someone fell asleep at the Calphalon factory the day my pan was made?

I was very much looking forward to cooking with my new Calphalon Professional Nonstick II 10" omlette pan. I bought it because I have always heard about how great Calphalon was. I have mixed feelings about the pan. I love the shape of the inside. It is perfect compared to my old pan. Food fits nicely inside and it is large for a 10" pan. The non stick coating works great. The pan heated well and cooked the food wonderfully.However, cleaning the outside proved to be quite a challenge. I had a small amount of oil on my burner from my cast iron skillet. When I used my Calphalon pan this oil stained the bottom. I followed all the instructions about using a green scrubber with comet on the outside although this got all the grease off there was still a stain. Several days later I was cooking fried chicken and some of the oil splashed over the side. Again, almost impossible to clean this off. I went out and bought some Dormand cleaner, which Calphalon recommends, and it didn't clean it much better. I now have a pan with permanent stains on the outside. I think I'm going to return it and get a non-stick stainless skillet, like All-Clad or KitchenAid.

I do a lot of cooking and when I had to get new pans I choose Calphalon, I was not disappointed. The non-stick omelet pan is the best. I use it for tons of things. I was very tempted to get 2, but instead I think I will buy the 8" omelet. This pan not only makes good eggs but sautees any of your vegetables without having to add all of the oil. Cleanup is equally as easy. I do not put it in the dishwasher however, that's just me. I mostly have the Tri-Ply set and add on as I need. You should not be disappointed if you try this pan.

My husband requested this brand and style of pan for Father's Day, so I complied. He loves it. However, if it weren't a gift, I'd never pay this much money for a skillet!!

My husband purchased the "professional" set for me on my birthday. The are far better than any other pots and pans I have had. I absolutely love cooking with them, nothing sticks, food cooks evenly, they are fantastic. The review from the person who bought hers at Target is misleading. That pan is a lower quality thus the lower price. You cannot compare them with the "professional II" series. If you want the best you'll have to pay for it.

I was given Calphalon products for my wedding and I have been very happy with them. I have Calphalon Commercial Non-stick 4 Qt Chef's pan which I use everyday for everything. It is very versatile and cleaning couldn't be easier. The non-stick coating works very well too. After having been so impressed with this product, I decided to buy a Calphalon non-stick fry/omelette pan. I got my 10 inch non-stick Omelette from Target (it's their more affordable Kitchen Essentials line). It worked great for the first month - however, it began to become very porous with use and now it's anything but non-stick. I took good care of it and followed their instructions for cooking and cleaning, using only nylon utensils. I don't know what went wrong but now the non-stick surface is totally gone and is VERY sticky. Now I have to use oil, and even then everything sticks like crazy. I'm thinking of sending it back to Calphalon for an exchange but am afraid the new pan will just turn out to be the same. I noticed some bad reviews on Calphalon fry pans. Maybe I should try All Clad or Anolon....
