My wife bought me this knife a few weeks ago and gave it to me for an early Christmas present. I use it everyday as MY ONLY KNIFE at work. It had held up as good as the day that I bought it. The "China" printed on the side opposite of the Katana lable did throw me off at first but this is true Japanese steel. I breakdown tenderloins, fish, chicken, calimari, and all various vegetables. Potatoes don't stick, cheese doesn't stick. I'd still pick a damascus Shun, Ginsu, or Kyocera over this, but the whole set is beautiful and affordable. I would recommend this for ANY CHEF. The slicer is the best sushi knife I've ever worked with. Great Buy

for the price, this is simply the best knife i have ever purchased. i have been a professional chef for the past fifteen years and have used just about any high end knives on the market, and this knife keeps pace with the best of them. a hard core, a stainless damascus finish, and a comfortable grip, are some of the key features that earned my respect here. i also find the balance to be fair whether i hold the knife by the handle (for things like cutting greens) or by the blade (for things like more detailed work). the scalloped blade releases food easily and can be used with even softer cheeses than you might expect without running into the usual mashed soft cheese looking slices. i primarily use this knife at my work for things like slicing cheese and roasted meats, however i find that it is up to most tasks laid before it. every time i use a knife i give it one swipe on each side of the blade over a ceramic hone, and haven't needed to do anything else to maintain the edge.

as with any higher carbon steel, or damascus knives, you do have to take care of this one as you cook (this means that having a damp sanitizer towel standing by at your cutting board is a must, not wet or dry, but damp). before walking away from the cutting board just give the knife a quick wipe down and you are covered, no rust worries or spotting on the blade. based on the performance of the knife i would give it a five star rating, however, when i opened the box and removed the knife, there was a few small imperfections in the blade edge. easy to fix, but not what is expected of a new kitchen knife. i have owned many calphalon products over the years and this is the first such problem i have ever encountered. overall i have to say you will be hard pressed to find another knife in this price range that will perform as well and hold an edge as long as the calphalon katana series knives. i hope this is helpful to you and thanks for taking the time to read my review.

My name is Dave, i have been a professional Chef for the past fifteen years, in that time i have used about any high end knives you can think of. This Katana series really does keep pace with the best of them. I spend six to ten hours a day cooking or prepping food in a high end restaurant so this knife has seen some serious use (far more use in a few weeks than a home cook could put in if given a year), and hasn't let me down yet. I've been primarily using these knives at work, (they don't offer a ten inch chef, so i have to use my Miyabi 7000d 10" chef for some of the bigger jobs) and haven't had to do any real work on the edge of the knife except to use the ceramic hone before each use, just one swipe down each side of the blade at a twenty five degree angle. I hope this review is helpful for you and I'm sure you will find this knife to be worth every penny!

This knife has an excellent feel in the hand. The handle flows from the blade like a piece of art. I fell in love with Japanese steel ever since I saw Kill Bill, and whenever I use this knife I feel like a Samurai. The blade is beautiful and holds a an edge the is like non other. This knife was a gift from someone close to me, initially I thought I would like another knife with a more prestigious name, but after using this knife for a year, I was so impressed, I bought some to give as gifts to other people who also appreciate its quality.
