My First Quality Knife,

I only started learning to cook seriously this year and immediately bought new cookware and appliances. I ignored knives because I thought a knife is a knife is a knife. Boy was I wrong! I got this knife upon the recommendation of a friend to buy just one good knife to see the difference. After handling quite a few different knives, this one felt the most comfortable in my hand. The handle is very ergonomic and has no bumps or protrusions that would force your hand to be in only one place or cause blisters when cooking for a crowd. I got the slicer because it was on sale.
When I got it home, I was able to appreciate just how sharp it is. Of course, the true test is how it performs and I have to say, this knife exceeds all expectations. I was able to get almost paper thin slices from a lovely ripe tomato. The little depressions running along either side of the blade are to keep foods from sticking to the blade and they deliver as promised. Everything I sliced just fell away from the blade neatly and cleanly. I also used this knife to slice up 15 lbs. of potatoes for mashing and I was thrilled with how easily and quickly I accomplished this. It sliced through the largest potatoes like butter with almost no force required. When I was done, I had no hand fatigue at all! I've been using it daily for a month now and it remains razor sharp. I do use a steel every time I use it, as recommended by my "good cook" friends. I've also purchased 4 more of these Katana series knives and I definitely recommend them to anyone looking to purchase a quality knife. BTW, these knives have a lifetime warranty from Calphalon - no questions asked!

I've only started cooking real food (translation: not ramen or mac and cheese) in the last 9-12 months, but I've bought quite a few knives, none of which I really liked, untill this beauty. The first thing I cut with it was green grapes for part of a salad. When I say hair thin, I really mean hair thin. It is sooo easy to work with and well balanced. It probably sounds stupid talking about the balance of a knife, but I like my fingers, I use my fingers to pick up things and to notify people in traffic what I think of them, so a heavy clumsy knife combined with very amature cutting/chopping/slicing skills in the kitchen would spell disaster. This knife fits my hands very nicely for long cuts, and lets me grab over the center of the blade when I'm doing small cuts or chopping. I'll be getting the rest of the series soon, there is no doubt about that.

This is a really nice knife... and beautiful. It is really sharp, but the handle is what sets it apart from my other knives. I have small hands, so some handles can be too big for me, but this handle's tapering shape seems like it would fit well for many hand sizes.
