Calphalon LX Series Cutlery 8" Chefs Knife

I am a fan of the LX series in general. The product was discontinued by Calphalon. It seems that some of the features of this knife lived on in other models of Calphalon and Henckels (aka the name engraving on butt of knife, no stain german steel) The knife out of the box is sharp enough to shave. Make no doubt about it, this is not a little knife, it has heft. I feel this only aids in the stability of the blade as rigidness aids in smooth cuts. The steel, unfortunately, will not hold a ridiculous edge, although it remains plenty sharp through regular use, and will resharpen very very easily. It will take a razor edge very fast. I hope to get many years of use out of these knives, as they are well constructed and don't seem to have any weak points. And yeah, they are all balanced. The 8 inch chef is the last one of the set that I acquired. I first got the 7 inch Santoku, which is the star performer of the set I feel. If you are looking for light little wussy knives, look somewhere else. This has more heft than a lot of German knives, but doesn't feel overwhelming. It is still easy to use. Just unique, fun, quality knife. If this sounds good to you, you should get it as this set is no longer in production and will be increasingly hard to find. If you only can get one knife in this set, make it the 7 inch santoku, it is mean!

The Calphalon LX series is very good and the chef knife is great. I used the chef knife right from the box and is as sharp as a shaving knive. After cutting in pieces a whole (small) pig, the knive still was sharp to cut another one.
