A fair pan, but might be dangerous as it slides on cooktop,

We've had this griddle for a couple of years now. The surface has turned somewhat dark and the non-stick surface is not quite non-stick any longer.Someone had told me that using canola spray oils (like Pam) can cause a sticky buildup on non-stick surfaces which are difficult to come off and then end up burning on and ruining a surface like the Calphalon. I really don't know if it's true or if the pan has just lost its non-stick properties over time. The ONLY non-stick cookware we've ever purchased which has not ever lost its non-stick surface after a few years are some high end ("expensive") stuff we bought at Costco from one of their traveling road shows. But I contacted Calphalon. They said they the cookware has a lifetime warranty and all we have to do is pay shipping to send in the pan and they will replace it free. What REALLY disturbs me about this pan is that it slides over the stove top grates. This may not be a problem on glass cooktops but on the standard ceramic type grates that came with our GE Profile gas oven/cooktop, this griddle is the ONLY one of our pans that slides around. I consider that potentially dangerous. I would spend the money to ship back and replace, but I certainly would not one new again.

The best for breakfast,
This review is from: Calphalon One Nonstick 11-Inch Square Griddle (Kitchen)
This is a great griddle for breakfast time. I use it all the time to make bacon, pancakes and hash browns. Even without using butter, things slip right off the surface of this pan, and it cleans up quick and easy. I used to use it for eggs also (until I got an 8-inch omelet pan) and it did a wonderful job with those as well. The down side, for some folks I guess, would be the size. For me, cooking for 2 people max, it is perfect. I can get 2 good sized pancakes on it, 5 or 6 big strips of bacon, or a nice heap of potatoes on it (not all at the same time of course!). If you have more mouths to feed, you might want to get a double burner griddle. Overall, it's a wonderful thing to have around in the morning.

First of all, all my cookware is calphalon, primarily non-stick. This is probably the best griddle I've used! My husband, who makes eggs & homefries for Sunday breakfast, loves using it too. Even heat, no sticking.

My Calphalon One Nonstick 11-inch griddle is by far the best of I have ever used. I bought a lesser one about ten years ago and it has just started sticking because of age. By the way do NOT wash any Telfon or similar coated cookware in an automatic dishwasher. Some manufacturers "say" their coating is dishwasher safe but I have learned the hard and expensive way that none I have purchased was.

We have already used the larger version (double size) for years, but wanted one a bit smaller for more common usa and not groups of people. So we ordered this one. Finish is great, and it makes great french toast. Will try pancakes soon.Great price, and ususal good shipping from Amazon.

Performance not holding up,
This review is from: Calphalon One Nonstick 11-Inch Square Griddle (Kitchen)
I bought this griddle from a retailer at a good price several years (about 3 or 4 years) ago. In the beginning it was great. But after much usage I'm ready to replace it. I have had the following problems with it ( and let me just note that I have put it ithe dishwasher once so I don't know if any of the problems are because of that):1. Diminished non-stick capability. Not as non-stick as it was when it was first purchased. 2. Due to diminished non-stick I use oil or butter when cooking on the pan which results in a sticky residue being left on the surface. This sticky residue does not come off easily. I have to scrape and rub it off. 3. Pan is slightly warped. Causes eggs to slide to one side instead of staying in the middle of the pan.

I bought this for my dad for Father's Day. At first it was perfect, even heating and cooking, unlike some lower end and thinner models. He only pulls it out to use every couple of weeks, but after a few months, we noticed it started to rock on our flat cooktop. A year later and roughly only 1/3 of the pan is in contact with the cooktop at a given time, usually the 1/3 near the handle as it's extra weight keeps it leaning that way. Needless to say this makes even cooking somewhat problematic. I've heard that fast heating or cooling can cause aluminum to warp, but we have other, older hard anodized pans from Circulon and Kitchenaid and haven't had this happen. Then there's the non-stick interior that isn't really non-stick. Not only does it do only a mediocre job of keeping food from sticking, you still can't scrub off the reminder without damaging what little non-stick there is. We have the same problem I saw mentioned in another review, a blackish sticky buildup that can't be cleaned off. Looks more like cast iron than non-stick these days. I bought this because I thought it would be a better performer than the cheaper models but feel I just threw away the extra cash. I may send it in and see if the warranty covers it, but the language in their policy includes excuses for lack of 'proper care'. Because of the pan's warping problem we somewhat wrote this pan off as far as care goes and it looks easily twice as old as it is. So I don't really want to spend another 10-15 bucks to ship it to them only to be told I didn't take proper care of it, even though I did... until after it went bad.

Just got this pan as a wedding present. Lightly seasoned it as described in the packaging and made a big batch of pancakes. I added no additional fat/oil to the pan cooking 16-20 pancakes and all were beautifully golden brown. No sticking whatsoever & very even heat distribution on my gas stove. Recommended.

This is my second Calphalon One nonstick griddle. The coating lasts a very long time if taken care of according to the mfg. instructions, and it heats very evenly. I'd highly recommend it to anyone who uses a griddle often.

I love this pan! It is so easy to use and makes great pancakes. The only caveat I have is that it takes a long time for the heat in the corners to catch up with the heat in the middle. Pancakes still cook, but they are lighter in color. Super easy to clean, just wipe it and put it away. I bought two other Calphalon pans at the same time and highly recommend their products.
