5.0 out of 5 stars Super Everyday Pan!
I received this pan as a wedding gift two years ago and I have used it just about every day since then. I frequently use it for one-dish dinners and browning meats-usually sausages. It heats evenly and it can be put into the oven to keep dinner warm. I read that you could actually bake in it, but I've never tried it. The only downside to this pan is that it does not...

2.0 out of 5 stars Somewhat disappointing
My first use for this pot was a batch of chili. It cooked very well, using low heat, and the chili didn't stick. However...every time I wanted to check and stir the chili, the pot spun around like no pot I have ever used. I had to keep a firm grip on one handle (using a double pot holder to keep from getting my hand burned). My range is electric with a ceramic top...

It heats evenly and it can be put into the oven to keep dinner warm. I read that you could actually bake in it, but I've never tried it. The only downside to this pan is that it does not have the stay-cool handles that the commercial series does, but as long as you can remember to use your potholders, I'm sure you will love this pan just as much as I do.

5.0 out of 5 stars My new favorite everyday pot, January 20, 2003

What a workhorse in my kitchen!! Have had it for two months and we've made everything from chili to candy in it. It's the perfect size for spaghetti sauce for my small (3) family. It holds the heat for making candy. I really like the two handles -carpal tunnel prevents me from lifting any larger pot with just one hand. Handles do get hot, so use potholders. Cleans up just with a swish. I think I should probably get another one!!

5.0 out of 5 stars Excellent Sauteuse, February 20, 2003

Calphalon is known for great professional performance and this 3 qt sauteuse pan is a great addition to my collection of fine cookware. This is the second Calphalon pan I have purchased from Amazon.com and I have to say I have been very pleased with its performance in the kitchen. My first attempt with this pan was a delicious pot roast. The meat seared well, was moist and tender which sold me on the pan immediately. Goes from stove top to oven easily. Easy care. Good choice and great price!

This pan goes from the top of stove to the oven then to the dinner table!! No more cooking/cleaning 2-3 pans for one meal!! I've made pot roast, BBQ chicken with stuffing, and kielbasa and white rice!! This is the one pan that really does it all!!

5.0 out of 5 stars The one, bar none., July 16, 2003

I just love my Calphalon pots, pans and skillets. They are wonderful. Clean easily, cook well, and the prices can not be beat. This one is no exception to the rule. I like using this one for smaller portions of marinara, soup and chicken chili. I have not had the problem asthe other reviewers have stated, the spinning of the pan. Yes, the handles get hot, I guess if I have a down point for this pan, that would be it.

5.0 out of 5 stars A great sauteuse and a great value!, June 28, 2003

This was the second addition to my Calphalon collection. I've had it just a few months, but in that time, it's been wonderful. The weight is perfect, and it heats up quickly (I have a gas stove). Nothing burns, and clean-up is a breeze. Due to the shallow size, water boils fast, and it can be used for boiling small amounts of pasta, rice, or cubed potatoes.

This sauteuse is perfect for sauteing chicken pieces, vegetables or creating a medium-sized pot of marinara sauce.

There is absolutely nothing I don't love about this pan, and I highly recommend it!

5.0 out of 5 stars 3-Qt Sautuese as Small Roasting Pan, etc., March 19, 2004
By

This review is from: Calphalon Professional Hard-Anodized 3-Quart Sauteuse with Lid (Kitchen)
I got this 3-Qt sauteuse as part of a Collector's Edition set with a 5-Qt. sautuese and an egg poacher set. Since then I've used both pans for searing and pan frying meats, and for sauteing msuhrooms and onions, however, I've just as often used them as small roasters. Because these pans are all metal, (no plastic handle scales or lid knobs), they do fine in the oven, even for broiling. For a chicken or small roast the 5-Qt. version is fine. For game hens, and smaller cuts of meat, the 3-Qt. is perfect. Broil lobster tails stuffed with duxelles, no problem! In these cases I roast without the lids of course, but they can also double as shallow caseroles with the lids. I have one of the Calphalon 16" x 13" roasting pans, but I really don't use that except for turkeys. For most of what I roast, these sauteuse pans give me another option. As for using pot holders...DUH!
About the spinning pan problems I've read about in a couple reviews...these pans are spun/drawn. The metal blank is forced into shape as it spins on a lathelike machine and the centers of the bottoms are not slightly concave as they are on some pans, which would leave them resting on a ring formed by the bottom's outer edge. They were originally made for use in restaurants and are more suitable for commercial stoves with gas burners. I remember having this problem with some old Pyrex glass cookware, for the same reason, but the Pyrex cookware was made to be used with a wire spacer even on electric ranges with element coils. (Back then, asbestos pads were pretty common too).
One other note: you may have a bum pan...mine does not spin on formica. You might check the stamping in the center of the pan's bottom. If there are any projecting edges on the stamped lettering, that might be the cause.

4.0 out of 5 stars Spin the pan, June 25, 2003

Don't get me wrong, I like this pan, it is the equal of all the other Calphalon I've bought (and that's a lot) with one exception, it isn't perfectly flat on the bottom. I thought maybe it was me, but others have had the same experience. My electric stove is so old that the pan doesn't spin on the burner, but the first time I washed it, I put it on the counter and could spin it around several times without much pressure. I thought maybe I had done something wrong, but I e-mailed Calphalon anyway...I'm still disappointed that I received NO ACKNOWLEDGEMENT OR REPLY. Other than the carousel effect, the pan is all that you'd expect it to be, heats evenly, cleans up easily....and you can give the cat a merry-go-round ride.

I had to keep a firm grip on one handle (using a double pot holder to keep from getting my hand burned). My range is electric with a ceramic top. My husband was observing me and asked why the pot kept spinning like that. It should probably be used only on gas ranges, but that doesn't help me any. The second problem I encountered was that the inside of the lid developed several dark stains which no amount of my cleaning could remove. The pot itself, however, cleaned very well.
