Whether firm country-style or tender French, omelets must be cooked quickly and folded in the pan. A classic omelet pan, therefore, is thick-bottomed for rapid, even heating and shallow with steeply sloped sides so omelets can be rolled easily against its sides. This pan qualifies on all counts, and it's ideal for sautéing and searing. Use only plastic, nylon, and wood utensils on its nonstick cooking surface. The pan is anodized for hardness, and for that no-nonsense, commercial-kitchen look, Calphalon's Professional Nonstick II cookware wears a matte finish. Rolled stainless-steel handles are double-riveted for durability and balance and stay cool on stovetops. Holes in the handles facilitate hanging on hook or peg. Calphalon is the only way to go. My 12" non-stick pan is great among my collection. The handle stays cool. Careful though, put cold eggs in the hot pan, and yes, you will get some sticking. Lower setting on the stove, warmer foods and the pan performs great. Easy cleanup w/nylon and mild detergent. Please never, never use any metal utensils! Really lasts a lifetime--with proper care and very good cleaning. Very heavy though with high lip for "flipping". Use a lighter pan for that. Go for it!

This pan is great for omelettes, eggs, bacon and even pan fried steak. Just don't set your temp too high because it heats up quicker than you think. We have several Caphalon items and love all of them.

I wasn't a Calphalon devotee until I ordered this pan through an Amazon Gold Box deal about eight months ago. I have hardly touched my All-Clad cookware since. This pan has excellent heat-conductivity. It gets hot quickly, and stays hot, even though I am forced to use an electric cooktop. I can successful sear fish and meats with this pan where previously only cast iron sufficed. I throw it right under the brolier for finishing fritattas, then it cleans up in a snap. They may call it an "omellette pan," but it's good for so much more.
