Fully forged from a single piece of German high-carbon stainless steel, this 3-inch bird's beak knife with its short, sharply curved blade and pointed tip is ideal for cleaning, peeling, and cutting fruits and vegetables and for shaping vegetables like carrots and potatoes. The blade is tapered from spine to edge and from heel to tip, with a bolster providing balance and safety. Additional balance and strength come from the full tang running through the handle, which is formed of hygienic, fiberglass-reinforced poly that won't crack, split, or chip and is attached to the tang with the traditional three rivets. The high-carbon stainless-steel blade takes and holds a fine edge and it won't rust, stain, or discolor. A quality knife like this should be hand washed. This knife is so handy for cutting all sorts of pitted fruits, and for other tasks such as taking the eyes off potatoes. It's elegant - fits well in the hand. It's a great addition to any knife set!

One of the most effective knives that I have ever used, but watch out!!! I cut my thumb on the first use because I was not used to the curve of the blade. Now that I have used it a few times, I don't know how we got along without a knife designed for the specific purpose of cutting things that are round. This includes onions, peaches, sweet peppers, etc. Critical part of a very good set that is much less costly than the "Swiss" brand that many have spent high dollars on to keep up with the Jones.

We have had this knife for about 5 months now, and we use it daily; anything from peeling and dicing fruit, to slivering a potato.

It has a nice solid feel to it, and it has a remarkably sharp blade, which has held an edge very well. The curved blade makes it a bit of a challenge to hone.
