Fully forged from a single piece of German high-carbon stainless steel, this 5-inch knife with its short, narrow blade and pointed tip is ideal for removing bones from poultry and meats neatly and safely. The blade is tapered from spine to edge and from heel to tip, with a bolster providing balance and safety. Additional balance and strength come from the full tang running through the handle, which is formed of hygienic, fiberglass-reinforced poly that won't crack, split, or chip and is attached to the tang with the traditional three rivets. The high-carbon stainless-steel blade takes and holds a fine edge and it won't rust, stain, or discolor. A quality knife like this should be hand washed. I wondered if this would be a useful addition to my knife set, since it was similar in size to the 4.5 inch parer. Rest assured that it is. The blade is somewhat thicker than the parer, and the point has more of a blunt profile. Flexible, but with a sturdy feel, this knife is perfectly suited to it's task. Buy it, and you will use it (typical Calphalon high quality).

Calphalon Kitchencutlery line is crafted inChina butfrom German steel. (supposedly from FB Dick- a mid price German High volume manufacturer. fully forged this boning knife is semi flexible and will work well as a fillet knife. Typically Calphalon knives come onlyfairly sharpened from the factory but are easy tosharpen andhold their edge quite well. most are heavier than Henckels and Wusthoff butthe boning knife is not and has excellent balance.
for sharpening, avoid the "chef choice brand machines which cannot cope with the bolsters on forged knives. the Tormek wet grinder is ideal butat $500+ too expensiveor andcumbersome for most people.I suggest a ceramic waterwhetstone( thebest are from the Japan woodworker.com and priced lower than the big cybermerchants. choose a 3000 grit stone for an edge that'll spilt hair lengthwise!Even with the mediocre factory grind, this knife will remove a turkey's breast meat without leaving any on the carcass; well honed, you'll find yourself using it as much as your chef knife and itsappearance will approximatathat ofthe costlier Henckels, Wusthoff, Viking, etc.

I bought this knife because I needed a boning knife to use in my meat science lab course. This knife is amazing and it held up nicely despite the fact that I sharpened it weekly for several months and I used it to cut up a lot of different cuts of meat. It is very flexible and it works really well at trimming fat and removing meat from bone. Another positive thing about the knife is the handle. It is easy to clean, it doesn't absorb moisture when you wash it, and it is comfortable to hold. I highly recommend this knife, and at this price you definitely will not be dissapointed. I paid more for it and I love my boning knife.
