The porous surface of the plank absorbs moisture at room temperature which transfers when cooking to give a moist, juicy and flavorful result. In case of cracking there are two bolts which run through the width if the plank - these must be kept tight.

The cedar plank is a good product but I was disappointed that the product did not include a cook book or a device to tighten the bolts that need to be tightened. I bought a cedar plank years ago that included both the cookbook and device to tighten the bolts.....these were bought for gifts and I think the person who got them may have trouble using them without more instruction.
