This review is from: Candy!: A Sweet Selection of Fun & Favorite Recipes (Hardcover)
Laura Dover Doran sets out to make candy making accessible to all, by presenting a variety of recipes, ranging from fudge to lollipops.
There are many good things about this book. She gives a background and explanation of ingredients, candy making utensils, and terms. Also, every recipe has a photograph of the finished product, so it's easy to see how your candy is supposed to turn out. There is also a wide variety of candy, from truffles to potato candy.
However, this may not be the best book for a beginner. Doran does not state how difficult a recipe is, so it's hard for a novice to gage how involved the recipe is. Also, in certain recipes, things seem to be missing. For example, the hard candy shows a tinted candy, yet no tint is in the recipe, nor is there information on what coloring can be used on hard candy. Is the liquid food color from the store ok, or is powdered better? This is just one example. Also, the experienced candy maker might be frustrated because less than a hundred recipes are presented.
All in all, I would recommend previewing this book from the library before investing in your own copy.
