Cooking is an art, a skill, and for some, even a pleasure. Food preservation is now a science. So, unless you know what you are doing, make all the jams, jellies, pickles, preserves and chutneys you want... then label them Refrigerate Only and keep them in the chill-chest [best just below 40 degrees]. If you want something shelf-stable, to last for years, read a modern book with the LATEST USDA Guidelines [they do change with new research] Follow up-to-date procedures. Leave this one to the history buffs, Like Me!

Do you remember watching your Grandma put fresh food up for storage??? Putting food up is a valuable skill.
I remember helping, but I just did what I was told. I was too young to really absorb what was being done. I haven't done this since I was young... so it helps to have some directions to follow.

It was so fun to read through all of this, it was like being back in Grama's kitchen while she was canning. It quickly made me realize how lazy we have become. I barely got a garden put together, much less, spending the time and focus needed on preserving. Someday maybe.
