4.0 out of 5 stars Good sweet tooth satisfying recipes for restricted diets
The recipes in this book are very tasty. They are excellent for people who need to eliminate refined sugar from their diets. As most of the recipes call for fruit juice concentrates or other sugar sources one must pay careful attention to the diabetic exchange guidelines.

I was very interested in this book due to my recent diagnosis of pre-diabetes. I've been advised to steer clear of simple sugars, esp. white sugar, white flour, rice and potatoes. I thought this book would be a great addition to my cookbook library, but alas it was not. Unfortunately the authors simply omit white sugar from the recipes, but still include huge amounts of simple sugars through white flour and fruit juice concentrates. If you are specifically allergic to white sugar, then this book might be for you. If, however, you're a diabetic trying to cut out simple sugars I'd pass on this book.

My favorite recipes are the muffins and breads. I purchased the book to reduce the amount of sugar in my childrens diet as I felt it triggered hyperactivity.

Most ingredients are available at the super market. A few require a trip to a well stocked health food store. The blueberry muffins are - quick and easy.

4.0 out of 5 stars Non-dairy, Sugar Free Recipes that Actually Taste Good!, September 11, 1998
By A Customer
This review is from: The "I Can't Believe This Has No Sugar" Cookbook (Paperback)
If you've been told that you can't have dairy or refined sugars and don't want to experiment with "traditional" recipes, this book is for you.

Recipes are well written and easy to follow. They even produce food that tastes good. For once, my boyfriend, who usually dislikes my attempts at non-dairy, sugar-free cooking, asked for seconds!

For my first test, I made Baking Powder Biscuits. Awesome! They came out flaky and tasty. (If you don't like a lot of salt, you might want to reduce the amount required.) For my second test, I made the fudge. Another tasty treat.

2.0 out of 5 stars Disappointing if you want it for the COOKIE recipes, February 20, 2005
By
This review is from: The "I Can't Believe This Has No Sugar" Cookbook (Paperback)
After reading the positive reviews, I bought this book. The introduction said "a few" recipes contain date sugar. When I went to the section on cookies, I found that all but three of the cookies recipes contain date sugar...usually 1 to 1.5 cups!
There are many other books that focus on fruit-sweetened baking...if cookies are your interest, I'd recommend looking at others first.

I like that the recipes are sugar-free and also avoid artificail sweeteners. The muffins I made were great, but I can't find Minute Maid pineapple juice concentrate or unsweetened grape juice concentrate. These are ingredients in many of the recipes.

3.0 out of 5 stars Sugar-free??, January 3, 2008
This review is from: The "I Can't Believe This Has No Sugar" Cookbook (Paperback)
Sugar-free baking books are a great idea, but- these recipes are not actually sugar-free, they use "natural" sugar substitutes in the form of fructose, date sugar, rice syrup, etc. Which are better than white sugar/sucrose or artificial sweeteners, but they are still SUGAR. Sorry, but the book title is very misleading.

1.0 out of 5 stars misleading title, January 23, 2009

I was disappointed with this book mainly because the title is misleading. I assumed that the author would give the sugar content for each recipe. I don't know much about the diabetic exchange method so it was not useful. The fact that she doesn't use sugar in her recipes doesn't mean that they are sugar-free. Most of the recipes call for white flour as well as sugar concentrates which will convert into sugar. She doesn't use sugar substitutes such as Stevia, splenda, or brown rice syrup which are much better if you're trying to control your blood sugar levels. In addition, she doesn't add any fiber to her recipes either. The title of the book should be "I can't believe this has no refined sugar (but not sugar-free)" Cookbook.

5.0 out of 5 stars So far, this book has been great!!, November 24, 2001
By A Customer
This review is from: The "I Can't Believe This Has No Sugar" Cookbook (Paperback)
I've tried three of the recipes so far. All have been received with much enthusiasm by my daughter, who must limit her intake of refined sugar. The ones I've really enjoyed so far have been the Apple pie and the Brownies. My daughter enjoyed the brownies so much that she wanted them made as a bithday cake. If the rest of the recipes in the book are this good, I would highly recommend this book.
