LOVE Carrabbas, BUT not too pleased with all the recipes.
on June 15, 2012
I was overly excited when I saw there was a recipe book for Carrabbas, and that it contained my favorite dish from there MARSALA. I personally order the steak marsala and they give the chicken marsala recipe but I figured I could improvise (after all it's the Marsala sauce that I love). I have made it several times now, and can honestly say NOT LIKE CARRABBA'S. I had such high hopes. The book does give very good tips about grilling, prep and selection of specific foods. A lot of the recipes are quite tasty. I have found that there sometimes seems to be some info missing from the recipe. For example there is a recipe for alfredo, now I'm not Italian or a alfredo connoisseur , but the recipe in the book says nothing about cheese. All alfredo sauce I have every had has cheese in it. I have not even attempted to make it, so it may taste great, but I felt like cheese is something it should have (and even at the bottom of the page there is a photo of cheese) *maybe a misprint? Back to the marsala, another thing the book does not mention the wine for the recipe used at the restaurant is Lombardo, the recipe does not specifically ask for that, and I feel that makes a big difference with the taste. It does tell you why type, dessert/dry marsala, but when I followed that it didn't come out to the taste like the restaurants. I know my rating is harsh but I absolutely LOVE CARRABBA's and would have wanted to know if the recipes come out exactly like the restaurant, and I'm sure some of them do, but my favorite (and the main reason I bought the book) does not.
