About the Author

Carol Reid is a graduate of Oregon State University with a Bachelor of Science degree in Foods and Nutrition. During her career she has counseled low income families on preparing low cost, nutritious and tasty meals. She has worked with youthful offenders in developing independent living skills including money management, meal planning and marketing.

She has been involved in catering for large and small groups for over 20 years, always including special touches and new approaches to food preparation.

Her favorite times are family gatherings with her husband, 5 children (plus their spouses) and 12 grandchildren.

Southern California has lived through two devastating earthquakes which caused prolonged disruptions of telephone, electricity, gas and water services. Other areas have seen far greater catastrophes caused by floods, tornadoes and hurricanes. No place in our world is exempt from the possibility of some type of major disaster.

The real impetus for writing Catastrophic Cooking, however, is the present uncertainty as to the full effect of the inevitable Year 2000 (Y2K) zero hour. Will it impact and cause disruption of our utilities, transportation systems, communications, banking, or other systems dependent on computers for a smooth flow of service? Will we experience only minor inconveniences or a more serious crippling of these systems? To compound this problem is the fact that it will not just be a localized situation. This event has the sobering potential of involving the entire country as well as other nations and all of this simultaneously.

In view of the knowledge that Y2K has the capacity to cause significant problems, and with the realization that there will always be uncertainty about other more localized catastrophes, a prudent person should plan to maintain an emergency pantry.

Each family needs to develop a personal strategy based on their expected needs for a given period of time. While no expert can reliably predict the exact nature and duration of the Y2K issue, it seems sensible to prepare home supplies for a catastrophe that may last 60 days, and also have a contingency bare bones survival plan, should the problem last even longer.

I have stocked my shelves for any catastrophe that might come our way. I knew our family would not starve but was beginning to be concerned about how I was going to put together easy and tasty meals from a can. How was I going to bake or cook them, too? The Reid's book has taken the guesswork out of the mealplanning. What a much needed book in these times we may face! I have made the oven box following the simple instructions - you are a genius, Chuck! We had a great time doing it, too. My kids are amazed that we can bake a meal - if we have to- in a cardborad box!

We have this book and have read it and used it. It is an easy reading and practical book that gets you ready for disaster situations. After having our home severely damaged in two California earthquakes, we appreciate the step-by-step instructions on setting up a disaster food pantry with nutritious foods we can use (not camping freeze dried fare) and can rotate through our normal food planning. And you get the recipes for using the food to boot! We also made our cardboard oven and cooked in it, and it works! It's a great family project and will put your kids at ease knowing you are good scouts and well prepared!

Catastrophic Cooking is anything but a freeze-dried, live off of the land survival manual. It is a practical and sensible guide to shopping for, stockpiling and preparing foods. The recipes are nutritious and interesting. The shopping lists and storage tips invaluable. Thanks for creating a helpful and non-hysterical manual for the millenium.
