Product Description

Caul fat is a thin membrane of fat covering the intestines of a pig, cow or sheep and it melts when cooked, so it provides moisture and flavor to the final product. In classical garde manger, and is used to wrap forcemeats and as a natural casing for sausages. Sometimes used to wrap roasts, so it is essentially a form of barding.

I searched all around for this product after seeing a chef use it on the Food Channel. I found it and ordered it. It came in a form I was surprised by (I thought it was separated in 1 pound packets not in a 10 pound lump). separating the amount I needed was not fun but it was possible. Using this product was an experience I will enjoy time and time again. There is a slight aroma and taste of bacon but the greatest part was it helped to keep my turkey roulades together without tying them and it helped tremendously maintaining the moisture of the meat itself as the breast is what is used for these roulades. If you have never used this before you are in for a treat. I am not a chef but I am adventurous. I do recommend this product I only wish it was packaged differently.

I saw this used on a video and just had to try it. We did the stuffed pork loin wrapped in caul-fat exactly as shown on the video. It was a huge success and looked amazing. This is something you might want to share with friends as the shipping cost more than the caul-fat itself. It came in two 5 pound bags and friends took one bag to share with each other while I kept one 5 pound bag and thawed just enough to separate into different amounts for future use. Why this is not available from a butcher shop is beyond me but apparently it is the secret to gourmet roasting by celebrity chefs. Look for the video under "Stuffed Pork Loin" by Allrecipes.com
