Eggs stuck like crazy the first time I tried very disappointed did some research on the internet about cooking eggs I decided to try the following..... 1. warmed the eggs to near room temp by placing in warm water for 10 minutes 2. coated the pan with a little olive oil approx 1 TB 3. Preheated pan on medium to medium high(7 out of 10 on my ceramic cooktop stove) for approx. 2 min 30 sec Pan surface temp 200 degrees 4. added 1 Tb butter and coated pan then added eggs cooked approx 4 min to perfection....... eggs did not stick surface of pan remained very slippery......
Amazing difference cooking the eggs this way.... I have an infrared thermometer to test the surface temp of the pan which I highly recommend..... I'm not sure if warming the eggs is essential for nonsticking, or exactly how hot the pan should be but since I've used this method several times with absolutely no sticking I'll continue this way
The pan is beautiful and appears very well made..... I'm hoping it will last many years time will tell
If you were worried about cooking eggs on an enameled pan because of sticking problems give it a try

I purchased a full set from another retailer (Direct-Buy). I have tried to cook "over-easy" eggs since the first day I owned them. I followed all of the pre-cleaning directions to the letter. I have tried frying eggs at a multitude of temperatures, oil levels, pam spray and have yet to get an unbroken unstuck egg. In addition after washing these in regular dish soap, eggs leave a cloudy film which must be removed with a ceramic cleaner. Numerous discussions with the retailer have been futile with only an offer of replacement, no refund even within 30 days. I cannot recommend this product (or Direct Buy).

I sooooo very badly wanted to be able to give a good review for this. I read the comments from others complaining it was too heavy and that eggs and other foods would stick. I wanted to believe they just weren't used to good cookware, and that they had the heat too high or weren't using oil. I really, really wanted this to be the perfect pan. But it's horrible.

The surface was marred from the moment I removed the sticker, leaving a big circle adhesive film no amount of dishsoap and scrubbing could remove. If you have more oil than egg in the pan, you might be okay. If you soak the stuck parts for a day and then scrub, scrub, scrub, scrub, scrub, you might be able to get most of the food off. I love the idea of a "non-stick" surface that doesn't have the easily-scratched, carcinogenic coating. But this doesn't work. It really, truly is awful.

What I DO like is the copper core (even though my preference, design-wise, would be to see some of the copper on the outside). I think it does heat more quickly, evenly, and efficiently than aluminum pans. The the integrated steel just makes it so heavy. It's impossible to lift with one hand, such as to flip the pan over and serve food out of it with a utensil. The small handle is thoughtful but not really all that helpful, since once you lift it with both hands you have no way of getting anything out. Maybe my expectations were too high.

I really wanted to love this but I just can't, so I've wasted a lot of money. Now instead I've bought a set of stainless non-stick "Earth Pans" from Kohls, which have a sand-based coating that is lightweight, non-carcinogenic, and actually resistant to food sticking! The whole Earth pan set cost about the same as a single Chantal pan, and they're wonderful.Earth Pan 10-Piece Hard Anodized Cookware Set

This product isn't worth it considering the price point. I actually returned mine because it had over spray on the bottom, as well as some bubbles. I can't comment on how it actually worked since I did return it. However, the production quality is usually a key indicator of performance.
