You read the words "Cheap", "Vegetarian", and "Budget" and instantly you wonder if any of the recipes in this book taste good.

Surprisingly, every recipe in Pam's new book Cheap Healthy Meals - Easy Vegetarian Recipes On a Budget (Vegetarian Cookbook and Vegetarian Recipes Collection) [Kindle Edition] will impress any one who loves to cook. Skip the introduction and go straight to trying out the recipes which are particularly helpful for busy people like me. With the use of simple yet flavorful ingredients, the book offers great dishes and really easy to cook recipes for breakfast, lunch, snack, and dinner which would appeal to kids and adults alike.

Starting with the "Quick Mushroom Quiche", I found myself reading the entire book from cover to cover like I was reading a suspense/adventure novel excited to find out what's next.

If you have these basic ingredients in your kitchen like onions, peppers, potatoes, mushrooms, or broccoli, you are on your way to making "Roasted Pepper Salad", "Garlic Broccoli Soup", "Potato Skin Casserole", and "Mushroom Parmesan" which I would definitely try this weekend.

I love cooking and experiment with food. When I came across this book's title I thought cheap yet healthy and easy too, you must be kidding. But trust me it's true. "Cheap" it all depends on how you find substitutes or add ons to make a complete or something that fulfills your appetite. "Healthy", yes the author provides a lot of great information about how to cooking vegetarian food and how to have a healthy diet. "Easy" because they have very simple procedures and less time taking. In the introduction itself the books presents as not a cookbook for vegetarian diet, but a guide for people who are into vegetarianism.

There are some good recipes to be found mainly in Salads and Stews. I loved the "Ultimate veggie omelet". The imitation bacon, meatless loaf etc all speaks about substitutes and health. I downloaded the eBook today and made a wonderful dinner for my family and they loved it. It has many recipes whose ingredients are easily available in India. I loved the outcome :) With the onset of monsoon I'm looking forward to try all the soups and stews.

As a book it would have been good if pictures of the recipes were provided. For an Indian Like me who generally has bread, rice, vegetables, dal as the daily diet would not have a better understanding of dressing, presentation and how the dish should exactly look. So a pictorial representation would have been a bonus point(means full rating). I would surely recommend this book to everyone.

This book delivers what the title suggests. These recipes do not include extra-ordinary ingredients that you need to chase-down at a store you have never been to. The meals are based on ingredients one would have in a healthy pantry or refrigerator. My family loves the curry dishes and I love the quick preparation. I also love watching them eat vegetables. There is no reason to go "Veg" and completely change the places you shop for food. You just make healthier choices, at the same stores and spend less! This is a great book for beginning vegetarians. It was a great book for me, as well. I have been vegetarian or "mostly-meatless" for 20 years. This book had plenty of new recipes, I had not thought of. I am getting a copy for my strictly-vegetarian daughter, who is going to college next year.

Interestingly, the first paragraph of Pam Kazmierczak's introduction in her book, Cheap Healthy Meals - Easy Vegetarian Recipes on a Budget (Vegetarian Cookbook and Vegetarian Recipes Collection) seemed to speak to me personally. I have been trying to figure out how to eat healthy without spending too much. I have also noticed that healthy and organic products are really expensive, and to encounter a book that gives the best alternatives is just refreshing.

I appreciate the tips incorporated in the cookbook, which are helpful for someone who is a newbie in cooking. The author presented various food preparation techniques and helpful recommendations- from substituting healthy choices of food and experimenting, to preparing meals with potatoes and "cutting the starch from the spuds"; from putting a new spin to the usual fast food favorites, to making our favorite dishes more nutritious. How about when fruits and vegetables are starting to get on the ripe side? The author has a say on that as well! The book is reader-friendly, even the instructions are easy to follow. Reading it felt as if I was talking to my best friend, while preparing healthy meals in the kitchen.

Now, I'm excited more than ever to try out the recipes on my own, I never thought living and eating healthy can be light on the pocket. Purchasing this book is just the right investment for a good life.
