If you're anything like us, you probably spent a lot of money on your knives a while back but secretly ask yourself "why did I bother?" because they just don't special anymore. That's because they've never been as sharp as when you bought them - something this gizmo can DEFINITELY change. This is a superb knife sharpener - Cooks Magazine rated the Chefs Choice absolutely the best electric model. It puts the kind of edge on your old knives that makes you realize you'd forgotten the true meaning of "sharp". There's only one flaw in their basic model, though. If your knives have gotten very dull, or you want to be a hero once in a while and put a better-than-new edge on a friend's knives, buy the model 110 instead. That model adds a heavier "grinder" blade (seen on the far left of sharpener in the picture) that can take off more metal quicly while creating the basic, third bevel on their "trizor" edge. Once you have that 3-beveled edge, touch-ups with the lighter grinding wheels seem to keep the knife sharp indefinitely. You never need this more than once for all but the most neglected knife, but when you do it's nice to have. I've used it to sharpen a cheap fish fileting knife we bought while camping that turned out to be so thick and dull you could barely cut cheese. Now you could shave with it...

Not as good as a professional sharpening or by hand but...,

Even though I normally use a diamond sharpening block and know how to check the angles of the bevel, I have to admit, this device is quick and easy.It gives an acceptable edge as long as you use it according to directions. It is convenient, as it can sit on your counter or be pulled out of the cupboard in a jiffy. So you tend to keep your knives sharp. The problem with hand sharpening is that it is finicky work that takes time. This is faster and easier, so you tend to do it oftener. A sharp knife is actually a safer knife as it cuts easily. If you force a dull knife, it can slip and make a nasty cut. (The worst cut I ever saw was with a knife too dull to cut wax. It had no edge, but made a nasty, torn gash. The user was forcing the dull edge through wax and got injured.) So keep your knives sharp and in a block and use them with respect. This sharpener will certainly help you do that.

I have been sharpening knives for over 45 years and this is the fastest, easiest way to get an excellent multi-angle edge on ALL of your knives. I orginally purchased a Model 300 about 12 years ago. The 310 is much better because it sharpens all of the way to the handle, a big issue with small blade pocket knives. If you like sharp knives and either do not have the skill or the time to do it by hand get yourself one of these.

I have had this sharpener for several years and am quite satisfied with it. When you sharpen your knives for the first time, it takes many repetitions with both wheels, but you get a very sharp edge. After "setting up" your knives with the first sharpening, you'll find it fairly easy and quick to resharpen every few months. I'd recommend it if you want to get good sharp edges but don't want to spend the extra $ for the top of the line sharpeners.

The Chef's Choice 310 is an outstanding home knife sharpener for its price. Very good value. My wife's knife are sharper now than they were when she bought them. Be sure to follow instructions on first time sharpening so the blade angles can be set.

I have a small collection of not very expensive knives ... chef knife, slicer, boning knife, santoku knife, assorted paring knives. Before each use, they get treated to a few strokes with a sharpening steel. Always thought they were pretty sharp. The difference after being sharpened on the 310 was very significant. The test was slicing tomatoes thinly and they all worked much better than before. Operation is simple. Felt slightly awkward on the 1st knife, but you get the feel of it pretty quickly, and once you do, the process goes very smoothly. With a product like this, who needs to spend a fortune on knives? Some time ago I bought a KitchenAid santoku knife at Walmart for ... I'm going to say ... $15. First use was a disappointment and it's been sitting idle since. Ran it through the 310 and now it's a winner ...

I have had this item for 2 years or there abouts and I have yet to get a knife sharp using it. I keep trying, I read the directions over and over, I know I am not doing anything wrong in the operation. I can spend 20 minutes or more on one knife and it is no sharper than when I began. I don't mind the 2o minutes, I assumed that for the price, it would take longer than a more professional sharpener, but I want a sharp knife when I am finished, it just doesn't do it, if I was more secure in knife sharpening and not blaming myself, I would have returned it. When I see those chefs on TV work those knives, I realize how dull mine it, I have good knife techinque, I just don't have a good knife, in fact some of the knives actually have a worse cutting edge than before I tried to sharpen them. I don't think I will try another sharpener, I just don't have that much money to waste, I guess I will just put up with my dull knives and use my Steel, which does work, but of course doesn't put an edge on a blade.Barry

I bought this sharpener for my husband as a Christmas present. It is decent. Still, it falls short for getting that perfect sharpening. I realize I may have to have professionals sharpen my kitchen blades but this one will do in a rush. My husband likes it and says it sharpens his fish file' knife well.

This item failed to operate from the start. would not runat full speed by itself, let alone with a blade in it. Now I have to pay to have it shipped to the manufacturer.

just OK,

This product can take a knife that was never sharp and put an edge on it, but, My best knifes that I use all the time, it does very little to make them sharper. I am not impressed with this item.
