I bought this slicer after very extensive comparison. I wanted a slicer with a stronger motor, but was undecided if I really needed the tilt feature. This slicer is very well made. It cuts meats very thin. I thought I would need to buy the optional blade for thin cuts, but the blade it comes with has worked perfectly for me. I have cut up ham and meat roasts. The taste is wonderful, not to mention the cost savings. I also have cut thick steaks (the ones at Costco) thinner to make steak sandwiches. The tilt feature is advertised to gravity feed vegetables. I use if for meat as well because the food falls away from the blade. It is much safer and I can cut a large amout before I need to remove the accumulating pile of cut food. I highly recommend this product. I was also very concerned that cleaning could be so time-consuming that it might cause me to not use the product as often. This is not the case, clean-up is a breeze and can be completed in less than 10 minutes.

Like the other reviewer, I'm very happy with this product. Seems well made... heavy enough to stay put... cleans reasonably easily, slices beautifully, including a block of cheese and warm pastrami nice and thin. Nice and small also, and I wanted a strong product but in a smaller footprint than professional models. I love the tilt, usually use it in tilt mode. By the way, the blade turns much more slowly than I anticipated... but it slices just beautifully. Result is that it's not as frightening as I thought it would be. Like the safety features for shut off as well.

After reading lots of reviews, I chose this slicer because there were no bad reviews about it although there were only two positive ones all together. It also looked like better quality than other gourmet models. I freeze uncooked meat overnight and slice it. I use it to slice meat paper thin for Japanese dishes such as SHABUSHABU and SUKIYAKI. I use it for Korean BBQ grill, too with slightly bigger thickness. The blade is so sharp that I won't need to buy a sharper one that can be purchased separately. I like the big round knob to adjust thickness. It's easy to see and turn. I like the on/off switch that is the plate you put your thumb on. I like the safety device, too. It's easy to clean, although no parts are dishwasher safe. I was thrilled when I saw Alton Brown using it on his GOOD EATS show. It must be good if he is using it!

CHEAP & WEAK,

Very disappointing.
Plastic on the sliding arm cracked within the first couple uses. Very weak gear mechanism and motor, the blade would slow down on harder foods like pepperoni. Now that this model is about six months old the motor has no power at all. I was surprised at how cheap it seemed, my concerns have been confirmed. Considering the inflated price this item is a real rip off.

This item works well for me. You have to cut the meat so that it fits on the slicer, but that's no big deal for me and my wife. We cook some meat, slice it, and freeze it in 3 and 4 ounce portions, depending on the fat content of the meat. It's a little cumbersome cleaning it up, but what meat slicer isn't? It's a good quality slicer. We use it every two or three weeks. It's certainly better than the 99 dollar slicers out there.

We shopped locally for the Chef's Choice 645 Slicer, but couldn't find one in-stock to inspect. After reading the factory description of the unit, we resorted to online ordering. When it arrived, we carefully unpacked it so we could examine it closely. What a BIG disappointment! The 645 had too much plastic in the construction which we had not been able to see in the photos we could find nor was it mentioned in written descriptions. It is a plastic device with a metal shell that is primarily for appearance. We repacked it and returned it to the vendor. This experience isn't free since we will be charged a restocking fee and shipping. Learn from our experience. See it before you buy!

VariTilt 645 Slicer,

In the description about this slicer stainless steel is mentioned a lot other than the blade this unit is made out of mostly plastic." VariTilt 645 Slicer" There is no variable tilt to this slicer it 0 or 30 degrees so the word VariTilt is deception at best. I removed this slicer from the box and was highly disappointed with the way it looked plastic and more plastic. Have not used it yet so I can't comment on how it works. This thing is overpriced by a $100.00 stay away at the $379 price
