The 1520 is the best and most flexible Chef's Choice Electric Sharpener for most users. The 120 and 130 are highly rated by many reviewers and have been available for a few years. Both of these sharpeners are for 20 degree knives only. The 1520 is unique in that it has fine diamond grinding slots for both 15 and 20 degree angles as well as a stropping/finishing slot used for either angle. It also has newly designed and improved guides that have less tendency to scratch knives and are very easy to use.

Most Asian knives are ground at a 15 degree angle whereas most European and American knives are ground at 20 degrees. This sharpener will do both, including Asian knives that have the 15 degree angle on only one side.

I find it very useful to grind 20 degree knives to 15 degrees to narrow the cutting edge and then give a couple of pulls thru the 20 degree slot to create a 20 degree micro bevel. I then finish with the stropping stage. This method is described in the User's Guide but is unfamiliar to most people. i would suggest that you try it first on a small paring knife. I think you will be extremely pleased with the result. One major advantage of this technique is that the cutting edge doesn't widen much after repeated sharpening. Touchup will normally only require using the third slot. Only when absolutely necessary make a pull thru the second stage once or twice before using the third stage.

The additional flexibility of both 15 and 20 degree diamond slots and improved guides makes this sharpener a superior choice to either the 120 or 130. The Chef's Choice 1520 electric sharpener is very highly recommended.

This sharpener did nice work on every blade I threw at it, including santoku, western chefs' knives, and even cleavers. It produced very, very sharp edges. For those who work with both asian and western knives, this is a good addition to a kitchen.

I've lots of knives, and needed something to sharpen them. My dad would use a bench grinder, and his knives were always sharp, but took him some 'minutes' to get the job done. This thing Chef's Choice is really great, easily does the first pass by roughly making it sharp, for which is has two angles, one for regular European knives, the other one for Asian knives. And the second pass it really does the finishing touch, and you've a really sharp knife. Give it four stars, as getting a really sharp knife, you need to practice, and be patient. Yes, much better than a bench grinder ;-) And at the final step, you likely cut into the plastic around the grinder, so I'm wondering how long that will last. So still room for improvements.

I have two of these units and love them. I use one until they don't function optimal; then, I return the unit to EdgeCraft (Avondale, PA) for refurbishing, which costs $45.00. When used CORRECTLY, they consistently produce unbelievable sharp edges on your knives. For those complaining that the unit does not sharpen a knife all the way to the hilt, NO sharpener will do that because doesn't cut with that part of the knife. Cutting is done with the 3/4 of a blade, starting at the tip. For those who complain that the wheels in the unit wobbled when they attempted to sharpen their knives, they were pushing too hard. Only minimal pressure on the knife into the unit accomplishes the sharpening. It might take a couple of passes to achieve the sharpness one desires; but, "wobbling" of the wheels is a user-created problem.

Quickly restored my 25 year-old 10 inch Chef knife to a shaving edge. Even faster for the 3 inch parer. Just for fun, I decided to put a 15 degree edge on my Santoku--it's never been sharper.

After quickly running through every knife in my kitchen, I decided to give it a try on my Benchmade pocket knife which has a much thicker blade. Quickly put a shaving edge back on the Benchmade.

I highly recommend.

This sharpener is great, it makes knife maintenance a breeze! I was getting ready to throw out some knives because I was disappointed that the edges didn't last as long as I thought they should, (mostly my fault, improper storage).
