5.0 out of 5 stars Great buy
Finally, a steak knife with a solid feel and no flex in the blade. Heavy duty with a masculine feel.

3.0 out of 5 stars Would prefer Walnut Tradition
I ordered these knives thinking they were the same as Chicago Cutlery's Walnut Tradition line, which has wooden handles and straight-edge blades. These Centurion knives are quite large, almost the size of boning knives, have black handles and serrated edges. They work quite well, but I would have preferred the others. I have used Chicago Cutlery products for many years...

CAUTION CAUTION CAUTION
I made a mistake in purchasing these. I did not realize their size or the serrated edge.

These knives are just what they say. Steakhouse knives. Don't get me wrong. If they are what you are looking for then they are very good knives for the price, as Chicago Cutlery usually is. But:

These are very much like what you would find in an inexpensive steakhouse. Better even. They are certainly not dinning room knives. They may qualify for casual in-house use. They are quite nice for outdoor steak grilling time.

The handle is large and thick and just over 5 inches long. A ½ inch larger than on the Chicago Cutlery Centurion 8 inch Chef Knife. The blade is just under 5 inches long. It is quite wide from edge to the back of the blade, 1- 1/16 inch. So wide that they will not fit into the steak knife slots on my knife holder. The last half of the blade is serrated. (No true steak knife should have a serrated edge.) Serrated blades do not cut, they saw and tear meat. The advantage of serrated is that they rarely have to be sharpened and they will still saw. These knives do not come very sharp, but because of the serrations, will do ok,

I wish I had a grinder so I could grind down the blade to a more household size, and get rid of that serrated edge. I don't know what to do about the giant handle. While they can be used for the household, they just don't look right for that purpose.

If you eat a lot of steak and other meats, and want a heavy-duty knife that you don't have to sharpen, this is the knife for you. Well made, excellent value.

4.0 out of 5 stars Oversized and held up well, March 20, 2010

I wanted knives with a solid feel, but these are overkill for our purposes. These are about 4x the weight of our standard steak knives. The blade is 1" wide at the base and 1/16" thick. The stainless steel blade is 5" long with large serrations. The black plastic "polymer" handle is also 5" long and is 5/8" thick, best suited to larger hands. The handle seems the same sort of material as our older Revereware pot handles - which are long lasting but fade if washed in the dishwasher. These might do the same; the box says "hand wash recommended." Unlike some higher quality knives, the metal reinforcements in the handle protrude very slightly. These are suitable for a large steak at least 1.5" thick. They are overkill for a 1" or less steak, or a tender cut.

I'd prefer something just as sturdy, but a little smaller and dishwasher-safe.

Update 7/28/2011

After using these knives for over a year I prefer them over my smaller steak knives. These are definitely my go-to knives when I want something powerful enough for a thicker or tougher piece of meat, but I also usually grab them for regular steaks, chicken, etc. as well even though they _are_ a bit overkill. I even use these in the kitchen when I need a short, sturdy and sharp blade. The blades have stayed nice and sharp after 100+ uses. The handles have faded a little from twice weekly washing in the dishwasher, but otherwise they have held up great.

1.0 out of 5 stars Knives are large and heavy., November 19, 2007

These knives are 10 inches long, very large, and heavy. Could be used for picnic entertaining but not in a normal table setting. More suited for large Porterhouse steak not filet mignons.

5.0 out of 5 stars Great steak needs great steak knives, May 17, 2010
This review is from: Chicago Cutlery Centurion 4-Piece Steakhouse Knife Set (Kitchen)
We bought several sets of these for ourselves and several for friends. W've used our original set for several years now. They are hefty and have a great feel when cutting. We use them for all kinds of cutting--not just steak/meat. They are just the right size in both handle and blade. So far none of the handles have become loose. We've washed them in the dishwasher some, but usually by hand. The serations are a little hard to sharpen, but not bad with a sharpening rod. Great wedding or housewarming gift.

My husband had been wanting some big ol' steak knives and I'd been resisting. We have 16 steak knives already! I got these for his valentine's day gift. He liked them immediately. I decided to give them a try. I'm afraid they were quite impressive. My old favorites may go by the wayside.... He likes to be able to cut a piece of meat with one downward stroke. These do. I anticipate we'll be buying another set!

I love these knives. Not only do they slice cleanly through steaks, but you can also use them to hack your way through a bamboo thicket without breaking a sweat. Seriously though, these knives are terrific. Hefty, sharp, well made, very impressive.
