4.0 out of 5 stars Sleek and effective.
I have had this knife for a while now, and I use it frequently. Its stainless steel design is absolutely beautiful! Although, it is not as sharp as I had hoped.

I used this knife religiously for several months - mostly for onions, mushrooms, and other vegetables. It did its job, but it was not as sharp as I would have liked it to be.

However,...

1.0 out of 5 stars Poor quality for Chicago Cutlery
I purchased the knife based upon the reputation of Chicago Cutlery products, was very disappointed when the knife arrived, it was chipped and has since started to rust on various sections of the blade.

However, recently I received a Chicago Cutlery knife set with a built-in sharpener. With proper sharpening, this knife is amazing - better than the knife that came with the set.

So, if you are willing to properly sharpen this knife regularly, it works like a dream and is beautiful doing it!

5.0 out of 5 stars my best tool in the kitchen, March 9, 2006
This review is from: Chicago Cutlery Forum 7-Inch Santoku Knife (Kitchen)
I use this knife daily and love it. It is light in weight with a shape that fits comfortably in my hand. I have used it almost daily for about 6 weeks and it has remained very sharp. I'm very happy with the value.

I have several Calphalon knives, and this was my first Chicago Cutlery knife. I'd been wanting a Santoku, and Amazon was offering this one on sale, so I went for it. I'm very pleased -- the balance is nice, and it's lightweight. I would definitely consider another knife from this manufacturer.

I find this knife to be very useful on a daily basis. It's not the same shape as a traditional Japanese Santoku Knife, but it does what it's supposed to do.

I do suggest to follow the care guidelines, washing it by hand with a soaped cloth, shapring it every few uses, and so on. I also keep my knife stored in a leather case to keep the blade from being damaged.

1.0 out of 5 stars You Get What You Pay For, December 13, 2006
This review is from: Chicago Cutlery Forum 7-Inch Santoku Knife (Kitchen)
I bought this knife because I wanted a Santoku knife, and Chicago Cutlery is a good name in knives. I have a paring knife from them and love it. I was really disappointed with this knife. When I took it out of the package, it felt cheap. The handle is hollow. The blade is not very sharp, even after sharpening it. They say that the most dangerous tool in the kitchen is a dull knife. I was using this knife to cut up some sweet potatoes, and nearly cut off my thumb. It was so dull, that I had to push really hard to get through the vegetable, the knife slipped, and I gashed my thumb about 1/3 of an inch deep. I have a Henkels knife that is much better than this one, and I've never had trouble cutting tough vegetables with it. I'd recommend saving your money up for a good knife instead of buying this cheap one.

I had high hopes when I bought it. After cutting two onions and a slice of stake, the knife is dull. I am shopping for another one now. It looks like the knife has built in child saftey features.

4.0 out of 5 stars Love this knife, November 29, 2008

I would give this knife 5 stars for balance, one piece design, ability to sharpen and classy design. The only thing I've found is that I cannot wash them in the dishwasher without some spotting. It rubs right off with a Scotch Brite pad, but I thought I would be able to simply put them in the dishwasher and not have to fuss with them. All in all, I do love this one the best because it has made chopping and dicing a breeze over Thanksgiving. I suppose for that alone, I can take the few minutes to wash this and my other knives I bought by hand and dry them before putting away. I did buy the chef's knife. They are very different in their functions and how they feel in the hand. The chef's knife is more of a carving knife, not so much for slicing and dicing.

4.0 out of 5 stars good value, January 15, 2006
This review is from: Chicago Cutlery Forum 7-Inch Santoku Knife (Kitchen)
I purchased this knife because my daughter didn't like using any of my knives; she wanted one like the chefs all use on Food Network. I wasn't willing to pay the high prices of the professional ones so this was a good compromise, and I'm pleased with it. It's nice-looking, feels comfortable to hold, works well for chopping vegetables. Overall, a decent knife at a very reasonable price.

1.0 out of 5 stars Very hard to cut fruit, vegetable from the day I bought it, April 26, 2011

Well, I was lazy to return it so I kept it. Now I regret and think I should have returned it. From the beginning, I can't cut anything with it. The handle is very difficult to hold and it has no power to cut off stuff. I did not even try it with meat which I am confident it will not work. The reason I did not return coz I figured if I need to pay $5 for return a $16 product, I might just keep it. From all my experiences at Amazon, I realized I should only buy books here which can't go wrong. Forgot to mention, this knife started to rust on various sections of the blade on the very first time of using it. So I made a return request; then tried to wash off the rust, They came off. So I kept it. Here is my experience with Amazon review--if you read one bad review, trust me, do not buy it--I just learned this lesson by buying another product which has 4 start with a few 1 star reviews. Big mistake! Found Amazon's reviews are very true and useful.
