This Knife is all one piece, so bending and breaking isn't an issue. It has stayed sharp quite a bit longer then other knives we own. (I found this out the hard way by cutting myself)

I definitely recommend this high quality knife which seems to be more reasonably priced then many of the competing knives.

5.0 out of 5 stars great knife, September 20, 2010
This review is from: Chicago Cutlery Insignia Steel 8-Inch Chef's Knife (Kitchen)
I am a professional chef. I bought this knife about 6 years ago, and have used it for home use. I love this knife. I own knives that cost upwards of 400 dollars, and I would choose this knife over all of them. It is very comfortable in the hand, and has a great edge. It stays sharp forever. Definitely a good purchase

5.0 out of 5 stars A Great Starter Knife, August 8, 2008
By
This review is from: Chicago Cutlery Insignia Steel 8-Inch Chef's Knife (Kitchen)
I bought this knife as a present for my son who cooks for entertainment. I own a lot of knives, including several Chicago Cutlery Cooks knives that have served me well for many years. This one has a Stainless Steel handle that fits a large hand well. I don't know if it is dishwasher safe, but the company recommends hand washing the High Carbon Steel. This knife represent value, Quality at a reasonable cost with a Lifetime
Guarantee.

5.0 out of 5 stars A great knife for beginners...., May 11, 2008
This review is from: Chicago Cutlery Insignia Steel 8-Inch Chef's Knife (Kitchen)
This is the first Chef knife I've ever bought. I was impressed with the quality and sharpness of it when I first tried it out. I first underestimated the sharpness of it and almost cut myself several times. Excellent for normal slicing and chopping. You'll enjoy the quality of an awesome gourment knife at a really reasonable price.

5.0 out of 5 stars Best knife for the money, November 21, 2011
This review is from: Chicago Cutlery Insignia Steel 8-Inch Chef's Knife (Kitchen)
Not all knifes are created equal, not even from the same manufacturer. Chicago Cutlery produces a variety of knife sets, and they all look similar to each other, but there are some big differences in use and quality. The Chicago Cutlery Insignia line is well made, I can't say the same for their other models. I have had this knife for several years, and I haven't sharpened it yet. I steel it and it maintains it's edge well. I am a chef and this is a great knife for home use, and for the price point I haven't found anything better. I love the solid steel construction, no worries in cleaning it or having dirt get it any seams. I only hand wash and immediately dry this knife, and I have not had any issues with rust or discoloration. I would not put it in the dishwasher.

4.0 out of 5 stars Great blade, but..., April 26, 2011

The blade is great, stays sharp for awhile and can be sharpened incredibly well. The only problem I have with this knife is the handle. When cutting wet items, especially poultry, it can become slippery.

The knife is awesome, however its not as sharp as I thought it would be but I don't know much about knives so I annotations sure what it should cut through. I am still learning. Overall I am content with my purchase
