A pain to clean...,

This review is from: Chicago Metallic 12-Cup Lift & Serve Sqaure Cake Pan (Kitchen)
This pan seemed very promising at first. But after use, 2 things are less than ideal:1)Cleaning is an ordeal. In this day and age of non-stick bakeware, this pan stains easily, and requires way too much elbow work to make it worthwile. The idea of slip out bottoms is nifty, but you have to carefully 'slice' the bottom from the brownie or cake to detach the metal bottom. And then you have to clean and scrub those pieces too. Other pans I have like Nordicware release their cakes smoothly and easily even without the removable bottoms. And this is happening in spite of more than adequate greasing. 2) The other feature which I don't like is that for some reason the inside of whatever you're baking takes too long to bake and so by the time the pin tester comes out clean, the tops and bottoms of the cakes are overbaked and hard. The pros: You DO get an amazing square shape that looks very professional, but that doesn't count for much if the end result isn't very edible.

great for perfect brownies, too!,

I have three of these pans for making lots and lots of brownies. I wanted a consistently sized brownie and I wanted each one to have edge -- voila! This is the perfect pan, and they make the perfect size brownies. The removable bottoms make removal very easy, but washing the pan is tough. Cake gets stuck in the corners, always, so it takes a bit of time. Then you have to wash each of the square removable bottoms individually. If you had a dishwasher, you could just put it in there, I suppose. The perfect pan for individual treats.

Perfect Pan,

I ordered this item to make square baby-block cupcakes for my sister's baby shower. What an excellent deal. This is a very high-quality item for a reasonable cost. The pan is made of heavy-guage metal and has some heft, is dishwasher-safe (yippee) and (best of all) comes with lift-out bottom "liners" of the same heavy-guage metal. This makes the cakes - no matter how moist and soft - removable with ease: no broken-off cakes whatsoever. I highly recommend this item.
