5.0 out of 5 stars Excellent Pan, June 5, 2009

I absolutely LOVE this pan...I have 10 of them! They're perfect for molten chocolate cakes, cheesecakes and other individual desserts. I recently made 200 individual cheesecakes for an event and this pan produced beautiful results.

Make sure to turn the pan halfway through baking to ensure even results...and use 2.5" parchment circles on the bottoms for easy cleanup.

5.0 out of 5 stars I love this company, February 3, 2009

This is my favorite pan I own. It works really well and makes the cutest little cakes. It works amazingly for molten chocolate cakes. This company has a number of really great pans, I probably own at least 10.

I looked for a pan like this for a long time. Found some that were heavier and clunkier and a lot more expensive (like twice as much). THen I found this one! It's easy to use, easy to get the cakes out and to clean-up due to the removeable bottoms, and an excellent value for the money! I highly recommend this product!

I do a lot of baking. Had a dinner that I needed 20 key lime pie/tarts for and just couldn't make anything I owned work. I have mini springform pans but they were too big. I was offering a number of desserts so I wanted something smaller.

This fit the bill! Heavy enough where it bakes well (I always rotate my pans halfway through), design is perfect! The bottoms just push up and out they pop! Parchment circles (which I cut by hand) make serving 'a piece of cake' and keeps clean-up quicker.

I don't put these into the dishwasher because I have had other pans rust. So it is warm soapy water. I store mine back in the boxes with the bottoms in a sandwich baggie.

So far everything I've made in these have been perfect - baked goods/cakes and the key lime which was chilled before serving. They are just the right size to share as well, and with a dollop of whipped cream, mint leaf and raspberry, it looks professionally done. I was asked where I purchased my desserts! Give them a try, you'll love them!

5.0 out of 5 stars Great for chocolate lava cake, great gift for bakers, March 23, 2010

I love chocolate lava cake! I bought this for myself from a brick-and-mortar store and then bought it again online here on Amazon as a gift for my soon-to-be mother-in-law. The price was competitive. We made chocolate lava cakes per the recipe on the box, which was convenient. I love that the pan is non-stick.

5.0 out of 5 stars Great Pan with Few Cons, February 5, 2010

I love a lot about these pans. However, I have only used them to bake cheesecakes, so I can't say more about them than my use for making them. The cakes slid out cleanly the first couple of uses, but then need a little bit of help from some non-stick cooking spray to come out nice and neat. This is not a big deal to me. Also, I highly recommend purchasing some 2.5" parchment square circles if you will be doing a decent amount of baking in these pans. Cakes slide off okay, but they slide off the discs MUCH easier with parchment circles. The discs can be a bit of a pain to clean because the only obvious way to clean them is one at a time. If someone comes up with a faster way, please let me know!!

I have had problems in the past with this type of pan rusting. I have had these for about 5 months now and I have not had any issues. All-in-all, this was a great buy and I would highly recommend this pan for mini, pretty desserts.

5.0 out of 5 stars Finally! The straight-edge pan I always wanted., November 29, 2011

I recently made 20 mini Oreo crusted Cheesecakes for a birthday party. The baking result was amazing - clean & straight edge mini cheesecakes (approximate final size of cakes fall between 2.75" & 3"). If you are baking with crust that has butter mixed in, make sure you wrap the bottom of the pan loosely with aluminum foil or you will end up with a puddle of melted butter in your oven. I used parchment circles to make the release from the discs easier & I did not have to use baking spray. Let the cheesecakes cool completely in the pan before releasing. Clean each cavity with dry paper towels to get perfect-looking mini cheesecakes each time after the first batch of cakes. Hand wash the pan & discs with warm soapy water & dry promptly. Placing the discs in a ziploc bag was an excellent idea by one of the reviewers. After the mini cheesecakes, I followed the Chocolate Lava Cake recipe printed on the box to a T. They turned out delicious, but I did not get the ooey-gooey lava center I preferred. I will try again & reduce the cooking time or temperature next time. I used Lindt 70% chocolate bars, which was an excellent choice. I prefer less sweet, but not too bitter-quality chocolate. Also, there was a missing cooking instruction printed on the box. It stopped in mid-sentence after mixing the dry ingredients to the chocolate mixture. The missing instruction was printed in French & Spanish though. Basically, if you add the sifted corn starch to the mixture & fold, you are good to go.

5.0 out of 5 stars MUST HAVE!!!, May 3, 2011

This is perfect for individual molten lava cakes and cheesecakes which makes it ideal for dinner party desserts. For a standard 9-inch cheesecake recipe, you will need to have two of these pans. I experimented on the cooking times and oven temp and came up with 300F for 40-45 minutes for cheesecakes. The lava cake recipe on the box is pretty good, although I did cut back on the sugar.
