I have this mini cheesecake pan, the heart shaped mini cheesecake pan, and the Norpro mini cheesecake pan. I much prefer my Chicago Metallic pans as they bake the cheesecakes more gently and evenly than the dark nonstick finish on the Norpro pan. As soon as the item arrives, before you throw away any packing material (including any paperwork) count the disks. I didn't use mine right away and when I did I found, in a factory sealed pack, I was two disks short. Not a big deal, but Amazon wanted me to ship the whole thing back for 2 disks. MAJOR annoyance and inconvenience. Seems it would have been cheaper, more...

I have this mini cheesecake pan, the heart shaped mini cheesecake pan, and the Norpro mini cheesecake pan. I much prefer my Chicago Metallic pans as they bake the cheesecakes more gently and evenly than the dark nonstick finish on the Norpro pan. Just be warned they are really tiny, each mini cheesecake is 1.75" across (which sounds bigger than it is). It is very easy to make an elegant display with different toppings, jams, fruit, drizzled chocolate, melted butterscotch, toffee bits, ice cream toppings, etc. on an assortment of mini cheesecakes. If you want an individual serving size cheesecake pan, try the Molten 'n More pan; unfortunately it has a dark nonstick finish, but I've managed to bake good cheesecakes in it by reducing the baking temperature.

My dish for the holidays is always mini-cheesecakes. It was always frustrating to get them out of my mini-muffin pan. This pan has made it so easy! I no longer dread making this dessert. Just a note though... the cups on this pan are approx twice as big as a regular mini-muffin pan so adjust your recipe accordingly. I just double my recipe and get bigger mini-cheesecakes. I don't think anyone will mind.

The only reason I didn't give this 5 stars is because of the cup bottoms. They have to be washed by hand because they stick together if you try to wash them in the dishwasher. The pan can go in the dishwasher (but don't let it sit with water on it too long - it will start to rust). Otherwise, the pan works great, and makes presentation a snap. I've used it twice and already received many compliments, and one person asking what bakery I bought them at - because they were too perfect too be homemade!

I now own 3 of these mini cheesecake pans and absolutely love them. The mini cheesecakes are truly the perfect sized dessert!
I was skeptical about how easy it would be to get the cakes out of the pans, but i've not had a single problem. To bake, I typically use a water bath, wrapping the pan in heavy foil and placing in a large roasting pan. To remove the cakes, just let the pan come to room temperature after being refrigerated, or warm slightly with a hairdryer :-) and push the bottom disk up..cakes slide right out! To maintain the integrity of the pan, I suggest never putting it in the dishwasher and avoid scratching the finish, as this will lead to rust.

i started using chicago metallic products years ago after reading good things about them from professional chefs and i have not been disappointed yet. i recently made over 200 mini cheesecakes using two of these pans for a family member's wedding (over the course of a month or so!) and the pans baked each of the cakes evenly, the results were consistent, and the cheesecakes were a hit! the trickiest part is pulling the cheesecakes out of the pans without damaging the top or crust but with patience and practice (and it helps to run a knife around the edge of each of the cheesecakes right after you pull them out of the oven, just the way you would with a larger/solitary cheesecake) it's not a problem at all. i'm keeping both of the pans and will happily use them and recommend them to others for years to come!

I've only used the pan once, but was very pleased with it. I got it to try a specific recipe for a Tea I gave and it worked great. I went with with this specific pan after reading reviews here and I think I made the right choice. For my purpose the size of the individual cheesecake is great. It took a little figuring to realize to just let it set out a few minutes and then the cheesecakes will push out nicely (no need to loosen the edges with a knife).

I absolutely love this product. I've been making regular cheese cakes for a long time and for my son's first birthday I wanted to make mini-cakes. I used the Chicago Metallic pan and it was the best little cheese cakes ever. They cook in 15 minutes instead of the hours. I would absolutely recommend this item, you will have it for years. If your making for a lot of people, i would also say to purchase two of them, that way you cut your baking time in half.

I make a lot of cheesecakes and sometimes I just like to make a variety of them and this pan makes it so easy to do. I just use my regular cheesecake recipe and I make 12 different little cheesecakes. Its great.
