Chicago Metallic Commercial bakeware is manufactured to meet the exacting standards of commercial bakers and consumers who prefer the tradition ob baking on uncoated pans. Each pan is crafted from heavy-weight aluminized steel that combines the durability, strength and superior heat conduction of steel with the tough corrosion-resistance of an aluminum alloy. The extremely durable pans heat quickly and evenly to ensure uniform baking. With use, the pans darken slightly, increasing the ability to absorb heat. There is no need to adjust the oven temperature called for in recipe. Safe for use with all utensils. Metal utensils may scratch the pan but will not affect its performance. The pans are finished with rolled rims. Pans won't rust or warp and are dishwasher safe. One of the few really good sources for all metal baking pans. I am pleased with my purchase.

Thank God these pans are not non-stick. As a retired Hazardous Chemical Materials Consultant, I take this opportunity to warn all reading this post of the dangers of non-stick cookware. Unfortunately, the Washington chemical lobby has prevented the banning of non-stick cookware. The company who developed this plastic has been hiding the truth for decades.

Above 350 degrees non-stick materials begin to degrade releasing many hazardous chemicals. Some migrate into the food, others are released to the air where they are inhaled. Hydrogen fluoride gas realeased destroys lung tissue causing permanent lung damage. The higher the temperature the more deadly the results. Asthma-like symptons are some of the first symptoms to appear, also flu-like symptoms with headaches, dizziness etc. Over time with each exposure damage can progress to COPD, and in worst cases, Bronchiolitis Obliterans.

Other vital organs can also be affected including the liver, kidneys, bladder and brain. Fluorides have an affinity for brain tissue leading to memory loss and dimentia.

For the sake of your health and your loved ones avoid Fluoro-polymers used in the food industry. These include cookware, oven coatings, food packaging especially micro-wave meals in plastic containers. Their grease resistant coatings are also fluoropolymers.

I was just shocked to see the 2 negative reviews about this set of pans. I bought this commercial line of Chicago Metallic bakeware long time ago and tossed away all my other non-stick stuff. I have loved the result of baking in these pans. One time, I even compare the cookies baked in different brand pans and Chicago Metallic commercial pans easily produced the best-looking cookies with more even browning. Even though this line is not covered with teflon- thank goodness it is not- with a little cooking spray, the baked goods come off the pans normally really well. I even own a pullman bread (pain de mie) pan of this line, my perfect long squarish loaf falls out everytime without leaving anything behind. It's my newest addition to my bakeware and I just love it. This line is endorsed by King Arthur Flour company as pans for serious or professional bakers. Unless people get defective products, this absolutely does not deserve any poor rating.

Top quality bakeware February 7, 2009
I've been baking for over 50 years now, using many various brands of bake/cookware. Chicago Metallic is the best, hands down. I prefer the Commercial line and have been using it for several years. It's very easy to clean, foods cook perfectly, and never, ever stick. I highly recommend this superior product line.
