Once available only to commercial kitchens, the pan is made of professional-weight aluminized steel, so it won't buckle or bend under intense heat and consistently provides fast and even heat distribution. Foods brown quickly and evenly--there's no need to turn the pan midway through baking. Bakers new to aluminized steel should pay extra attention at first, since this heavy-gauge pan bakes more quickly than lighter-gauge varieties. The pan gradually darkens with use, which actually improves heat retention, but it may also require that oven temperatures are lowered by 25 degrees to ensure even browning. The traditional uncoated surface of this sheet makes it extra rugged and a great conductor of heat, but butter, oil, or parchment paper should be used to prevent foods from sticking. Greasing or lining the pan simplifies cleanup, since the pan will go from oven to dishwasher with no scrubbing in between. The shallow rim of the pan ensures a tidy oven as well--melting cheese and loose nuts stay contained. --Emily Wolf

First of all, I must say that I've never seen a jelly roll pan so sturdy. So much inexpensive bakeware tends to be rather flimsy that it soon warps. I don't anticipate any such problems with the Chicago Metallic pan. It's heavy, very durable-feeling and I can't see the possibility of wearing it out unless you're very, very hard on your bakeware. The lack of nonstick coating has not been a problem--just use shortening or a cooking spray instead, and you don't have to worry about metal utensils scratching up the surface, etc. That, and the regular jelly roll pan is cheaper than the jelly roll pan with nonstick coating.So far, I've been very happy with mine and think it is a great bargain considering the low price. Based on this good experience, I wouldn't hesitate to buy more products from Chicago Metallic.

These jelly roll/sheet pans are extremely well built. They are very heavy and thick, do not warp, and should last a lifetime. They are the highest quality I have found, and I've owned many different brands.
Be aware though, that they are NOT in any way non-stick, and are hard to keep clean. If you don't mind breaking out the steel wool to keep these in shape, they are excellent - if you are looking for something that's easy maintenance, however, go with non-stick. Of course, none of the non-stick ones will last anywhere near as long, as the teflon finish wears off any cookware after a while.

These Chicago Metal pans were recommended to me by a baker who has worked in a bakery shop for years. They come in all sizes (I like the full sheet and 1/2 sheet pans),they don't warp, are heavy duty and not too costly. Great for cookies, roasting vegs, chicken and more! I brought these for my friend as a Thank You gift.
