The secret to perfect, random crumb Italian bread is high hydration dough. This allows for perfect texture, crumb and crust. Unfortunately, without support, you end up with a flat ciabatta loaf. This pan provides support and venting of Italian and French loaves, allowing for perfectly formed bread. Couldn't be happier with the results.

I bought this pan so my loaves of bread didn't flatten out when they went in the oven. I wondered if the dough would push through the holes and cause the bread to sitck in the pan. I was amazed to watch the baked bread fall out with no effort at all. I have used it several times and each time the result is the same, a perfectly formed loaf with a nice crispy crust.

This is really an excellent product. We have made bread in it multiple times and it has always been great. It's also very easy to clean.

The only problem with it is that it is hard to pull out of the oven when the bread is done. This is because it has no handles of any kind. When your hands are in big bulky gloves, the pan is hot and heavy because of the bread the whole apparatus is very unwieldy.

A pair of handles on the sides or a single handle in the middle will make this a 5 star product.

This is basically fool proof. Simple and easy to use and keep clean. I think it is a great value and a must have for anybody who loves to bake bread.

Update: 11-13-2012 - I have used this at least a dozen times if not more.... Bakes a perfect crisp loaf every time. I always make extra for my great neighbors. I throw a half cup to 3/4th cup of water in the oven just as I put the bread in the oven to give it a nice and crisp outside, but soft on the inside. Another tip to get that golden color on top is to brush a little egg yolk, or if you don't want to use a egg, go old school and brush a little milk on top. Happy bread making! Bake a loaf and share a loaf.... Very inexpensive but invaluable for someone who needs a little TLC to brighten up their day.

I've been baking bread, all kinds, for many many years (I'm 68) and this is by far, absolutely the best pan I've ever used. I didn't even have to grease or season it and it slid right out in perfect shape. I've used lots of different methods to bake bread, free form, coffee cans, baguette pans, etc., but this perforated pan has become my favorite. I LOVE it!!

The bread (I used the basic boule recipe from Artisan Bread in Five Minutes a Day: The Discovery That Revolutionizes Home Baking) came out wonderful, crusty, and the perfect size and shape for a dinner party or gift. The combination of baking with steam (from Artisan Bread in Five Minutes a Day), and the perforations in the pan really create the perfect crust. If you're trying to choose between the French Bread pan and the Chicago Metallic Commercial II Non-Stick Perforated Baguette Pan, get the French pan. But really, if you're an avid bread baker like I am, get both!
