The secret to perfect, random crumb Italian bread is high hydration dough. This allows for perfect texture, crumb and crust. Unfortunately, without support, you end up with a flat ciabatta loaf. This is really an excellent product. We have made bread in it multiple times and it has always been great. It's also very easy to clean.

The only problem with it is that it is hard to pull out of the oven when the bread is done. This is because it has no handles of any kind. When your hands are in big bulky gloves, the pan is hot and heavy because of the bread the whole apparatus is very unwieldy.

A pair of handles on the sides or a single handle in the middle will make this a 5 star product.

Made my first two loaves of baguettes in my new baguette pan. It met my expectations. The perforations created the little dots on the bottom of the loaves. Even though this is a non-stick pan, my baguette bread recipe called for a light coat of oil on the pan. I think any non-stick pan should always be coated with oil for successful bread production. I would not hesitate to recommend this pan. It is a sturdy, quality-made pan and I am considering buying a second one.
