The uncoated surface offers good reflectivity for even dispersion of heat which means more consistent, even baking and gradual browning. After repeated use, darkening of the metal will actually enhance baking performance. Very heavy duty and more durable than typical cookie sheet. Very pleased with the product and the outcome of my biscotti. Highly recommended.

After receiving these pans I am once again convinced Chicago Metallic makes a great product. Heavy duty, perfect size for baking terrific biscotti. Although, there are many items that can be baked in this pan! I truly recommend the product.
