Wow! Heavy duty, good quality., October 13, 2005
This review is from: Chicago Metallic Professional 3-Piece Value Pack with 2 Cookie/Jelly Roll Pans and Cooling Grid (Kitchen)
I purchased this on the Friday sale for a real bargain price ($20) and that is quite deal.
This is the real stuff - heavy duty, quality construction. I have used them with and without a silpat for baking cookies, finishing satueed fish fillets, oven roasting vegetables and many other purposes.
They are easy to clean and substantial. There do not seem to be any hot spots or other problems.
The only complaint I have, and I make it with reservations, is that they ARE heavy. Do not try to lift a loaded sheet out of the oven with one hand. The weight is also a good thing (see "substantial" above) but it easy to forget just how heavy it is going to be when you reach for that hot pad!

Great value, fits Silpat, December 28, 2005
This review is from: Chicago Metallic Professional 3-Piece Value Pack with 2 Cookie/Jelly Roll Pans and Cooling Grid (Kitchen)
These cookie sheets (actually jelly roll pans, because they have short walls on all four sides) are heavy and well-made. I have had no problems with them warping when placed in, or removed from, a hot oven. (That buckling sound when pans warp always startles me!)
What I like best about these pans is that they are the right size for a regular (half-sheet) Silpat or Exopat silicone baking mat. Lots of "half sheet" pans made for the home cook are actually a bit too small at the bottom for the mats to lay flat.
The cooling rack is a nice bonus. It would make a little more sense if there were two racks, since there are two pans. After all, if you remove two pans of cookies, they probably aren't going to fit on one rack!
I bought the set on sale for $20, and at that price it's one of the best deals I've seen on Amazon. But even at $30, it's a good deal--it would be hard to do better.

Solid, Heavy Duty Nonstick Sheets with Wire Rack, January 18, 2008
This review is from: Chicago Metallic Professional 3-Piece Value Pack with 2 Cookie/Jelly Roll Pans and Cooling Grid (Kitchen)
I could not be happier with this set of two sheet pans with an included cooling rack. As noted by some of the other reviewers, this set of sheets is quite heavy and very solid. I have used them now for about a month, including some service under the broiler and extended use in 450 degree ovens, and have not had any problems with warping or the like. They are still flat and true as the day that I purchased them.
Though I normally follow the recommendations of America's Test Kitchen and Cook's Illustrated for equipment, I purchased this item before I saw the November/December CI article on sheet pans. In the article, they give the Chicago Metallic pan a "recommended with reservations rating", stating that it had warped slightly under high heat. They recommend the Lincoln Foodservice half size heavy duty sheet pan instead(note that this $15.40 pan does not include a wire rack, which you would need to purchase separately).
Notwithstanding their rating, I still back this item whole-heartedly and personally have no inclination to upgrade to their recommendation. I have found that many of my recipes do in fact require me to have a second sheet pan on hand. Given the great price on this set, and my experience that they are very heavy duty and have not in any way shown they will ever warp, I can easily back a five star rating on this product. I bought a second set for my girlfriend, who also loves them.
