Amazing non-stick coating,

I love this pan! Both the pan itself and the roasting rack have the same non-stick coating. This isn't Teflon, folks. You can put it under the broiler and it's fine. The package claims it's also dishwasher safe, although I haven't tried this yet. After soaking, even the worst messes clean off easily by hand. The corners are all very smooth, and thus easy to clean.
At 13"x9", this is a small pan. It's great for a pork tenderloin or two, a beef eye of round roast, some cut-up chicken pieces (about 4 thighs), or a couple of quail. The product description suggesting you could use it for "roasting the Thanksgiving turkey" is misleading - maybe it could fit the Thanksgiving boneless turkey breast! Chicago Metallic makes a larger roaster that can fit larger meats. However, for regular family dinners I prefer this smaller size, as it allows me to put another small pan next to it in the oven to cook a side dish simultaneously. The size also makes it easy to tent with foil to let a roast rest right in the pan. And, of course, it's less surface area to clean than a larger pan. With the rack out, it's a nice deep 2-1/4 inches. I've found it's great for making dishes such as aloo tarkari (curried potatoes), which tend to leave hard-to-clean crud on glass casseroles. It could probably replace a 13x9 casserole in most applications, as long as you don't need to use a sharp knife to cut food in the pan. For my family of four, this pan is a great little workhorse.

As noted by another reviewer, pay attention to the dimensions of this roasting pan. It is high quality and has a slick Teflon-like surface. But it is much smaller than any broiling pan you have ever seen before. This is not a typical broiling pan!
Addendum: My wife used this pan to cook a delicious spiral steak in the broiler. She said that it worked just fine and will be great for our small family of just 3 people.

I bought this last year when I needed a medium-sized broiler pan. I wanted something high quality that would last for many years, work correctly, and stay clean. This fit the bill.
So far I've used it many times for roast salmon, roasted red peppers, and broiled chicken kabobs. I also use it by filling it water and leaving it in the oven while baking artisan bread. Its durable, heavy-gauge construction held up to the high heat of baking and broiling - no warping, scratching, nor discoloring - still perfect. I liked mine so much I'm about to get one for my toaster oven for smaller meals. Of all the metal baking brands I've tried, Chicago Metallic seems make the best baking products available. This pan is great for apartment dwellers who don't have grills; meats and vegies get delicious dry heat similar to grilling. Another valuable aspect is the ridiculously easy cleaning. Whenever you broil/roast, you'll get a lot of run off from the meats or marinades. Soaking it overnight loosens even the worst stuck-on mess, but usually just a little scrub and the sticky food bits wash right off.

Over the last several years I've gone through roasting pan after roasting pan. Inevitably, they all come to the same end. The bottom of the 'non stick' pan fails and burnt on stuff refuses to come off without taking the finish with it. And then the rust... rust in the bottom of the pan and rust on the pan rack. I've bought so many pans and inevitably this is what would happen to each of them. Until this one. This one washes clean every time. The finish is just as good as when I bought it, a year later. The rack is rust free. I absolutely love it!
It is smaller than the previous pans I've owned, but I can still easily fit five pork chops on it. Or a large turkey breast. Or a huge ham. And there's also a larger size of this same pan for those who need a bigger size. This pan has been wonderful. And if you have any further doubts... I spied my pan on Good Eats. Hey, if Alton Brown uses it, it must be great!

This pan, billed as non-stick and broiler safe, is neither apparently. I followed the packaging instructions and washed it before using. I used it to broil pork chops and when I pulled the pan from the oven, I found the meat drippings fossilized on the bottom of the pan.
I've been soaking it in water for 8 hours now, and the drippings are STILL stuck on the bottom. I also noticed that the nonstick surface is already scratched off the bottom of this pan. I am not impressed. In fact, I'm deeply disappointed in this product.

fits a 15 pound ham, soak it for a few hours and the entire thing is clean, and I cooked with corn syrup. excellent price and quality. want to purchase more from this company.

This pan is "almost" everything I hoped it would be. The only drawback that I have seen is that after cooking a roast pork (which came out great by the way). The clean-up was very difficult. I didn't want to hurt the surface with Brillo, so the toughest thing I used on it was a "Scotch-Brite" scrub sponge. It took forever to get clean. Of course it doesn't have to be sparkling between uses so I still like the pan.

I wanted a pan which would fit in my kitchen sink, so that it would be easy to clean and I would be thus more likely to use it. Well, this is the pan. It cleans very easily due to the non-stick coating, and it is definitely broiler-safe, even on the top-rack. It is very small, at only 9x13. But that can be a benefit for couples or small families.
Now all that's left is to see how it holds up over time... |
