Once available only to commercial kitchens, the pans are made of professional-weight aluminized steel, so they won't buckle or bend under intense heat and consistently provide fast and even heat distribution. Foods brown quickly and evenly--there's no need to turn the sheet midway through baking. Bakers new to aluminized steel should pay extra attention at first, since these heavy-gauge pans bakes more quickly than lighter-gauge varieties. The nonstick SilverStone surface allows cooking without butter or oil, and ensures easy cleanup of even over-browned cheese or caramelized sugar. As with all nonstick surfaces, be sure to use nonabrasive sponges and cleansers only, and choose wood, nylon, plastic, or rubber utensils to prevent damage to the coated surface. --Emily Wolf

I bought these pans because I can never finish a full size loaf. The smaller size is perfect for slipping a loaf into a lunch sack. The only problem I've noticed is that the corners of the pans are starting to rust after only half a dozen uses.

The pans are high quality as is all Chicago Metallic Bakeware. My only disappointment (and this was enough for me to knock off two stars) was the very tiny size of the pans. I have used mini pans for a few years to make Christmas breads for my neighbors and friends. These are so much smaller (at least 50% smaller than the disposable mini bread pans I have been using)than what I am used to that they won't make bread of a size that I can give as a gift. The pans seem little bigger than a large muffin! I will keep and find a use for the pans but I must renew my search for mini bread pans for gift giving.

I've had these pans with the folded edges and I don't like how food gets in the crevices. I've also had the non-stick pans, and I think they over cook quick breads and cakes. I finally found Wilton aluminum pans @candyland.com. They were just what I was looking for.
