Featured Recipe: Bourbon, Bacon & Pecan Brownies

6 slices of bacon
2 c all-purpose flour
1 t salt
10 oz dark chocolate, chopped
1/2 c pecans, chopped
2 T unsweetened cocoa powder
1/2 c butter
4 eggs
1 c granulated sugar
1/2 c dark brown sugar
3 T bourbon

In medium skillet, cook the bacon until crispy. Reserve 1/4 cup of the bacon fat and set aside. Let bacon cool and chop roughly. Set aside.

Preheat oven to 350° F. Lightly grease bottom of a 9x9-inch baking pan with butter or shortening.

In medium bowl, mix together flour, cocoa powder and salt. Set aside.

In large heatproof bowl set on top of small saucepan of simmering water, melt dark chocolate and butter. Stir constantly, until smooth. Remove from heat and cool slightly.

With electric mixer on medium-low speed, beat eggs, granulated sugar, and brown sugar until frothy (about 1 minute). Beat in melted chocolate mixture, bourbon and reserved bacon fat. Fold in flour mixture and pecans, just until combined.

Spread the batter in the prepared baking pan. Sprinkle bacon on top. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out nearly clean. Cool completely, about 1 hour. Cut into 4 rows by 4 rows to make 16 brownies.

Though I'm not a professional baker, I am absolutely a passionate one. That passion has led to some extraordinary recipes, a few deliciously simple techniques, and a lifetime of baking experiences that are as satisfying as the finished products. I'm excited to share some of them with you in my first cookbook!
Aside from my first high school job cooking in a restaurant, I bake in my home kitchen for the benefit of family (including my four pugs) and friends.  And since 2007, I've enjoyed sharing recipes through my blog, Baked Chicago.
What got me started on this baking path? It may be destiny: my mother's maiden name is Baker. And like a lot of kids, I remember helping mom in the kitchen. One of my earliest baking memories is brownies from scratch, using the cooking bible of its day - the Better Homes & Garden Cookbook with the iconic red-and-white plaid binding. I quickly learned to experiment by throwing in my own variations like chocolate and butterscotch chips, toffee, and peanut M&Ms - all in the same dish. These early baked "masterpieces" got a warm reception at school parties. Fellow high school students dubbed my rich and unusually dense brownies "ton cake." Over the course of high school, I made a ton of "ton cake."
I still love tinkering with recipes and the challenge of breaking them down to the simplest terms, changing up ingredients and textures to create unique, truly flavorful treats. Here are a few truths I've discovered along the way that make my baking simple and successful:
  • Focus on fewer, high-quality ingredients in your recipes.
  • Baking from scratch is almost always easier (and cheaper) than from a box.
  • A recipe should be easy to follow and execute. [There's nothing I hate more than a kitchen sink full of dirty pots, pans and utensils.]
Brownies are among the most decadent of baked deliciousness, yet deceptively easy to make and a great canvas for culinary expression. In this cookbook, you'll find 33 of my best brownie and brownie-inspired recipes. All are easy to follow with instructions fitting on a single page. I hope they inspire you to express your simply decadent baking creativity.

I remember making my first pan of brownies and believe me, they weren't anything like these scrumptious treats! The recipes are so unique and the ones I've made so far are absolutely delicious. I purchased three more for Christmas gifts for my "baking" friends and one with a teenaged daughter who loves to cook with her Mom in the kitchen. I made a couple of the recipes and am sending samples with the cookbook. Great gifts!!

The recipes are easy to follow and there are "Brownie Points" throughout that are super hints. The variety of recipes are amazing...who knew there were so many kinds of brownies? Mr. Morris has done an excellent job creating these recipes and I love the photo's of the finished product along side of the recipes. Actually, that is the most tantilizing part, looking at the picture makes me want to make all of the recipes - tonight!

Best of all, the proceeds of the book go to the Chicago Food Depository and PAWS Chicago. I can't think of a better opportunity to give something wonderful to those I care about while giving back as well. Thank you Harvey for such a great book!!

I baked the red velvet brownies for a company holiday party and they were a huge hit. The next day the hostess told me that as she was looking for the pan to wrap up what she thought was about a half a tray of leftovers, she asked her husband where the brownies were. He said "they're gone." "What do you mean, they're gone?" she said. "They're gone." He had proceeded to eat them all! I must bake more!

One day last week I fetched up the mail to find a copy of Baked Chicago's Simply Decadent Brownies Cookbook as a gift from author Harvey Morris, who knows there is nothing Grandma likes better than a good pan of brownies. Little did Harvey know that I spend most Saturdays baking with my youngest daughter and that one of his definitely decadent brownie recipes would be first on the list!

As it happens, my son-in-law is a pretty special guy and a brownie aficionado. He's very good to me. Hauls my groceries and my garbage, hangs my plants and curtains, even does my laundry now and then, so I try to reciprocate in ways like keeping his lunch box full of goodies. I've had a bit of a learning curve over the years though, because my son-in-law can be a bit picky and is very much a purist. No mushrooms. No nuts - ever. Not long ago I made some Peanut Butter Cookies using almond butter instead of the peanut butter. He was happily munching away until he overheard me tell my daughter that the peanut butter wasn't peanuts. OOPS! (You've never seen a perfectly good cookie hit the garbage can so fast!) So, my daughter and I were a teeny bit concerned when we decided to make Harvey's Bacon and Salted Caramel Brownies. Understandably so.

Baked Chicago's Simply Decadent Brownies Cookbook is a small book, just 33 recipes, every single one of which is decadent, some downright over the top! The recipes are well laid out (Harvey believes in "everything all on one page") and the print is big enough for all but the legally blind to see without their glasses on.

I have always been more of a cook then a baker - mostly because baking requires you be more exact about measurements and seems a lot harder to me. I picked this cookbook because it seemed like something that even I could manage! I tried two of the recipes so far- the dark chocolate and raspberry liqueur brownies (I love love love dark chocolate) and the peanut butter whirled brownies (I also love chocolate and peanut butter) and I am happy to say both turned out and got rave reviews. They looked and tasted impressive but the directions were easy to follow and didn't require me to purchase a lot of special ingredients that I would never use again. Definitely a good purchase for me.

I am a bit of a cookbook addict and I must say this is one of the best cookbooks out there! Harvey has created so many mouthwatering recipes that it is very difficult to decide which one is a favorite. The recipes are very easy to follow and I absolutely love the touch of the "brownie points" scattered throughout the book. I do not normally write reviews on websites but this cookbook impressed me so much that I wanted to share my excitement. I plan on purchasing more to give as Christmas gifts or hostess gifts. I thought it would be nice to put together all of the ingredients for a recipe and put those along with a copy of the book in a gift basket. An added plus to purchasing the cookbook is the fact that all net proceeds go to the Greater Chicago Food Depository and PAWS Chicago. In my opinion, that is true holiday spirit. Cheers!
