Directions
You Will Need: 1 lb uncooked boneless, skinless chicken breasts (about 4) (Helper tip: You can use 2 cups cut-up cooked chicken or 1 can [10 to 12 1/2 oz] chunk chicken, drained, instead. Omit step 1; stir in margarine and chicken in step 2.) 1 tbsp margarine or butter, 2 1/4 cups hot water. Note: Cook times are based on the use of thawed chicken. 1. Cut chicken into 1-inch pieces. Melt margarine in 10-inch skillet over high heat. Add chicken; cook about 3 minutes, stirring occasionally, until outside turns white. 2. Stir in hot water, sauce mix and uncooked rice. Heat to boiling, stirring occasionally. 3. Reduce heat; cover and simmer about 25 minutes, stirring occasionally, until rice is tender. (Sauce will thicken as it stands.) Remove from heat and uncover. If desired, fill warm tortillas or taco shells with chicken mixture. High altitude: (3500 - 6500 ft): Increase hot water to 2 1/2 cups and simmer time to about 30 min. Directions using uncooked whole chicken breasts: Make as directed - except melt 2 tbsp margarine or butter in 10-inch skillet over medium-high heat. Cook whole chicken breasts 3 minutes, turning occasionally. Cover and cook 3 minutes longer, turning occasionally. Continue as directed in steps 2 and 3 - except cover and simmer about 28 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. (If using a skillet that has a shiny finish, increase margarine to 2 tbsp.) High altitude (3500 - 6500 ft): Increase simmer time to about 33 min.

In an effort to have something "quick and easy" on hand and as one who basically lives on white meat chicken, I tried this box mix not expecting much more than some flavored rice to accompany my otherwise boring white meat chicken. Since I often buy bulk boneless skinless chicken, frozen, it seems that I never have the forethought to defrost the chicken for a meal. However, I've found that while I cook the frozen chicken in a frying pan, just a tiny drop of oil, on low, it's like steaming the chicken...no additives, just plain chicken. While the chicken is "cooking" I prepare the box mix (without adding the chicken like the box says) - the simmer time on the mix is just about the same time it takes for the chicken to cook - I cube the chicken still in the cooking pan (to ensure it's fully cooked post freezer), toss it into the now finished box mix - saves lots of time as I never have anything defrosted when I need it :)

Like others, I have experimented and added frozen corn (much better than canned I've found) - now my staple in this "mix", plus I sometimes add shredded cheese atop it before serving. I've tried the diced tomatoes and peppers...not a big fan. I always top with a dab of sour cream.

The mix freezes very well and reheats with ease. I tend to add a sprinkling of water when microwaving for some extra moisture in the rice. A leftover favorite is a flour tortilla with the mix, sour cream and a dash of taco sauce.

Friends to whom I've served this mix have been shocked it was indeed a "mix" (that is, when I've confessed!)...not your typical flavorless or overpriced "helper mix"!

Sometimes I am leery of whole grain products because even though they are better for you, some of them just don't taste good. This one not only tastes great, but the seasonings and flavorings for the chicken are fantastic. This is easily my favorite of the "Helper" varieties, and I am happy to see it in stores near me now. The honey mustard glaze that goes on the chicken is very true to taste- its almost identical in flavor to the honey mustard I use for sandwiches so if there wasn't enough of it, I could easily add to it, but its pretty much perfect the way it is. The only reason I only gave 4 stars is because it doesn't make as much as the box says it does like some of the other Helper titles. I usually go heavy on the chicken for this one to make sure it makes enough.

I was rather disappointed to discover that the box only included pasta and a powdered seasoning. Where are the veggies? Glad I didn't purchase this at the store. Saved about $.50 a box.

My girlfriend and I thoroughly enjoy the Chicken Fried Rice variety, but think that it lacks in flavor (mainly in the chicken itself). So, I decided to marinate the chicken one day (for the life of me, I forgot what I used). Marinating your meat is key to a DELICIOUS Asian Helper meal because your meat at Chinese restaurants have been smoked, marinated, or something before other closing ingredients are added.

Since I marinated the chicken with the CFR, I decided to do so with the Lo Mein without tasting it unaltered. IT TURNED OUT DELICIOUS. I marinated the chicken pieces in Kraft Asian Toasted Sesame dressing for a little over 3 hours. Poured that entire concoction into my 10in skillet and followed the box directions (adding 2 dashes of ginger at the end, the box calls for 1tsp). I stir fried a bag of PictSweet Asian vegetables (they have a light "Oriental" sauce) and tossed that with the lo mein. Not only does adding veggies make the meal complete, but it also increases the size of your servings.

I bought the honey mustard along with the lemon herb chicken helper simply because it was part of a sale. I was thinking that it sounded gross and wanted to punish my boyfriend with something weird. I did think it was slightly more work than most box meals, but when I tried it I was hooked! I have been searching for it ever since; because they seem to be out a lot at the store. I can't wait for that nummy taste again! The lemon herb was good too.

The wife and I love this fast easy meal and she has added a few touches of her own to enhance the taste. Instead of regular oil she uses sesame oil and adds a little our preferred soy sauce during cooking. Fast, easy and great taste.

I use this product to make a great burrito just like what is made at our local Taco place. I make up the mix according to package directions, but don't add the chicken. I heat up a can of refried beans and then make burritos by putting about 1/4 cup of refried beans, 1/4 cup of the enchilada filling and a tablespoon or two of picante sauce on a flour tortilla and then rolling up burrito style. These have been a big hit every time I have served them.
