Global chicken soup!
This sturdy little hardback has almost 60 different recipes for chicken soup (including two basic recipes for Light Stock and Heavy Stock). The categories span the globe and include the Americas, Asia and the Pacific, Africa and the Caribbean, India and the Middle East, the Mediterranean, and Northern Europe including Russia. The two I make all the time are the Persian Chicken and Yellow Split Pea Soup with Mint (delicious!) and the Greek Avgolemono Soup (tangy!). This is probably the only chicken soup book you'll ever need.

Made the Armenian Chicken and Lentil Soup w/Dried Apricots from this book years ago when it appeared in the Wash Post with a review of the book. Then I lost the recipe and went looking for the book for me and also for a friend who loved the recipe. Both of us are thrilled with our books which offer numerous ethnic varieties of chicken soup--each so different that you forget that they are all variations on a theme. This is a spectacular collection of soups for the soul!

I made one a week for about 2 months. Loved all of them except the north American versions. Fun, nicely presented, great variety. Highly recommended.
