This book will certainly expand any cook's idea of what chili is. The author claims "it can be made out of anything that eats grass or lays eggs." In fact, the recipes for chili in this book even go beyond that statement, because there is a whole section on meatless chili too. The author is an accomplished writer and is knowledgeable about the history and lore surrounding chili, as well as the typical, and not-so-typical ingredients that go into it.

W. C. Jameson is a well-known author of books on the southwest dealing with legends and buried treasure, and his colorful and interesting style makes this book a fascinating one to read as well as to cook from. One of the parts I liked best was Chapter 1, "The Story of Chili," on the various theories of the origin of chili, and the various types of chili peppers. Who would have thought that chili could go back as far as the early 1700s? Chapter 2 explains the geographical variations in chili recipes and traditions, and Chapter 3 describes what "fixins" can be served with chili. Both of these chapters demonstrate a great many variations and possibilities.

The central chapters (4-6) are devoted to traditional recipes and variations, wild game chili, and "fitness" chili, an over-arching term for chili recipes that have less fat or are calorie-reduced, or are vegetarian. I especially appreciate having such a variety in the latter category.

There are 135 recipes in all. There are even recipes for seafood chilis and some very bizarre ones such as rattlesnake chili. I don't think I'll be making that one! However, I've tried many of the recipes, and they're all excellent.
