Chimay Trappistee cheese is a cow's milk cheese from Belgium, whose creation is steeped in tradition and careful procedure. The cheese is made in a Cistercian Abbey by Trappist monks who make the cheese and then bathe it in the Chimay beef you want to cook with this cheese, think about the flavors that compliment both the cheesy goodness and the malted taste. A grilled Chimay Trappiste cheese sandwich with ham and caramelized onions on crusty bread is a combo that can not go wrong. For a pairing, don't over think it and keep it casual. arrived, tastes great, mold free... it looks alot smaller than the picture... tastes great with Chimay white (on draft)... the crunch stuff on the outside gives it something more...

Listen, it's a strong cheese that is not for the inexperienced cheese eater. Strong flavor, hoppy, and salty, however an excellent accompaniment to Trappist ales or other robust ales. A little pricey but a nice treat now and again.

I bought this cheese locally and it has a great flavor (it's not a mild cheese) with a hint of beer. My son liked it as well.

This was the worst cheese I have ever purchased. It ended up costing over $26.00. The smell was awful. We couldn't stand the smell. We barely tasted it because of the smell. It came to us warm. It was a total waste because we threw it away. I contacted the company about the product, to this day I never received a reply. Save your money. I purchased it because the beer they make is very good. They need help with their cheese. I gave it 1 star because I couldn't give it zero.
