My current copy of this book is so worn out that I need to get a new one. The recipes are simple and delicious, the organization of the chapters makes sense, and the index is complete. The photographs are good too. All in all, the best simple chinese cook book I have used.

I've got a lot of Chinese cookbooks and most of them gather dust on my shelf. This is the one I use over and over. In fact, I'm replacing my original copy because I've worn it out. The recipes are fantastic, the tips on how to prepare ingredients are priceless, and many of the sauces and techniques can be adapted for other uses. This book helped me go beyond its recipes and start creating my own. P.S. I heartily recommend the scallion pancakes.

I've had this book since 1983, when I was living in California. What I like about it is that the recipes use ingredients which are pretty easy to get, both in the US and Europe, and the recipes are easy to follow. I'm about to buy it as part of an engagement present for a friend; she's always asking about the chinese stuff I cook! My own copy is falling apart but I wouldn't trade it for the world.

This is a very thin little paperback publication at only 96 pages long. At first glance I rather expected it to be a cheaply thrown together mish-mash of the usual Chow meins and sweet and sour dishes but the content is actually very good. There is a good range of dishes from across China and several are accompanied by diagrams or pictures illustrating some of the preparation techniques involved. There is not much in here that I don't have in many other books but I would have no hesitation in recommending this to novice cooks. Illustrations for all dishes would have been nice but those that have been provided are very good. A nice little book overall.

Have you read the reviews here? What do most have in common concerning this item? People are saying that their copies of this classic publication are so well used and worn they're falling apart! This Chinese cookbook from Sunset is probably one of the best entry-level guides to Chinese cooking ever published in this country. Ours has been a sad wreck for years - each and every page smeared with oil, flour, you name it, and the binding gave way years ago. Every page is loose, and there are several "supplemental" pages added over the years, mimeographed recipes added from friends, torn from magazines or wherever. If you're here at these reviews at all, you're already interested in this item. Buy it! Join the club! Unless you're specializing in some kind of Chinese regional cooking, and just want a collection of good general recipes, Buy This Book, I don't care how used the vendor says it is! You won't be sorry.

This cookbook, as simple as the recipes are, is a good one. So good that our original copy had become heavily stained. The different cooking sauces concocted from the wonderful recipes were so thick in places that some pages could probably have been eaten on the spot! If you're willing to spend a little time and to stock up on the right ingredients, you'll find this a good book to get your feet wet with cooking your own Chinese dishes.

Years ago I took a Chinese cooking class and bought this book at the same time. I ordered a used copy since I had given my well worn copy away when I moved out of the country. Sunset books were always great.

This is the best Chinese cookbook we have used. We love that these recipes are as close to possible as the dishes we ate when my wife and I lived in China. There is a guide at the front that tells about how to cut and prepare the various vegetables and meat, the different cooking techniques, a glossary of the main foods and ingredients used in the book, and a photo of the foods just as you would get them from a Chinese grocery store. Also there are many colored photos of the prepared dishes to show you what they are like. And there are suggestions for parties or full three course meals. We have almost worn our copy out because we use it that much. The recipes are just detailed enough for a good explanation but not overly complicated.

I recently discovered this treasure of a cookbook. Reviewing the pictures and recipes brought back so many pleasant memories of when I lived in China.
The recipes are fairly authentic (as authentic as a recipe can be that is not prepared in a Chinese kitchen!) and the guide to ingredients, sauces, spices, etc is so helpful. The book contains several "Special Features" that go into more detail about Chinese hot pot, clay pot cooking, preparing tea, etc. Overall, our family is going to enjoy trying out the recipes.
