I bought this book when I was first learning to cook because I love Chinese food and wanted to do my own fried rice. While the other recipes are very good, this is the best fried rice you will ever eat. I no longer eat fried rice in restaurants because it cant match this.

This is the best Chinese cookbook!!!! Every single thing I have cooked from it has been delicious - the fried rice is the best I have ever had anywhere - even my brother will cook it in order to eat it. The receipies have flavor, not soy sauce, and they are textured. This is NOT the stuff you get for $5.95 a plate at the food court. I also love the detailed description and histories of all the various Chinese cuisines and ingredients, as well as the defining of the types of prep. I am not a professional chef, but I do cook a lot, and I do cook and eat a lot of asian cuisine. Trust me, you want this cookbook!

This is the best Chinese cookbook I've used. There are lots of delicious and pretty easy recipes. Once you buy a good set of the major ingredients (ginger, hoisin, rice wine, soy sauce) and get a decent wok/any big pan, you can make a lot of delicious meals that are as good as any Chinese restaurant, for very cheap. The Mongolian Beef is really good. It tells you the basics of Chinese cooking, like how to make tofu and how to cook really good white rice. Highly recommended from an amateur cook on a budget like myself who loves flavorful Chinese food.

THE best cookbook!! I have had this book over 18 years and I refuse to let any one borrow it. The pages are well worn and we have tried almost every recipe.

My mother and I share this cookbook constantly. Now that there are some available used, I will be picking up my own copy. The recipes are amazing. Beginners and experts would enjoy them. My favorites are almond chicken and the sweet & sour sauce. The sauce is so good, it's the only kind my family eats. We never buy it. If you're looking for a good chinese cookbook with yummy recipes, easy to understand instructions, and obtainable ingredients--this is the one for you.

I've used this book to cook Chinese over the past 6 years. The pages are stained so bad with use during cooking that I can't even read the recipes anymore. To me that proves it's worth.

Chinese Cookery was one of the first chinese cookbooks we purchased. We have used it regularly for nearly 10 years. This book is wonderful for beginners, experienced cooks, and lovers of chinese foods

I have been using this cookbook for over 20 years and it is still the best cookbook for Chinese cuisine that I have ever seen. I am Chinese and have taken several Chinese cooking classes, but I keep coming back to this cookbook. The recipes are classic, authentic and easy to understand. I need a new copy now to replace my tattered one!

I love this book! My mother gave me a copy when I moved out on my own, 10+ years ago. Her copy has been re-bound because it was so warn. After trying almost every reciepe, each one is fabulous, no fail! If it was still in print, I would give it to every person I know as a gift. If you find this book, don't pass it by.
