I had never cooked with fermented black beans before but I had seen them in several Thai and Chinese recipes. For this price, I thought I'd give it a try. Now I won't be without it. It lasts forever, a little goes a long way, and combined with Sichuan peppercorns, really packs a flavor punch. Highly recommend for stir fries. Use your food processor to grind up a teaspoon or two then toss with garlic into your oiled wok before adding anything else. Yum.

I miss the shrimp & lobster sauce I ordered at restaurants when I lived in Maryland. Moving to NC, the first place I ordered shrimp & lobster sauce at, I was so disappointed with the lack of flavor, a white bland sauce they call what is supposed to be this delicious dish. So I did an online search for my recipe. I remember black specks in the food I bought in MD saw that it was fermented black beans. I purchased these to re-create the dish I missed so much. These beans made the dish. What I cooked looked & tasted almost exactly like what I used to order and am so happy that I can now make my own shrimp & lobster sauce at home.

Use this in shrimp with lobster sauce and other Chinese recipes and the dishes are just what one would find in a Chinese restaurant. Very salty, so follow the directions to rinse the beans well. Also this package will last for years as very few are needed in each recipe.

These are wonderful fermented black beans, and an integral component of many Chinese dishes. It is much more cost effective to buy these and make your own black bean sauces, controlling the flavor, rather than buying the expensive tiny tubs of premade sauce at the grocery store.

I use this for many Chinese vegetable dishes, but also Korean black bean noodle dishes (jajangmyeong) that my wife is fond of and my favorite Thai style dishes, pairing wide flat rice noodles with black bean sauce and contrasted with speed basil.

These beans produce a very savory flavor that is good on its own, but even better when contrasting it with fresh clean flavors like basil, mint, green onions, etc. This is a great purchase if you're an adventurous cook, a valuable ingredient to add to your pantry's arsenal. Chinese black vinegar, garlic, shichuan pepper, black pepper, and ginger are other ingredients commonly used in making sauces with fermented black beans.

I used to be able to buy a fermented black bean paste that I loved. I can't find it anymore. So I tried these. I always see the beans in my favorite "house tofu" dish at my favorite Chinese restaurant, and so I just dumped them in when I tried making it myself. That didn't work. The next time I'll definitely mash half the beans into a paste and add them early, then finish with more beans at the end.

The bag is quite large. I hope I can use them all up someday. As for taste, they taste fine. I just needed to mash some I think.
