The author explains the Chinese concept of the different properties of common foods which can be used to keep one healthy by balancing the different energy forces in one's body. Being of Chinese origin and having followed these precepts from an early age, I can vouch for the effectiveness of the recommendations for staying healthy. However, the book only tells us "what" and not exactly "why", so it's a good beginner's book, but not a scientific dissertation.
